Since it sounds like something is loose have you checked connections in the engine compartment especially the firewalls on each side? I had a similar noise in my 355 just from a screw being loose on the side firewall but no such problem with the "99 360 stick. Sorry I can't be more helpful but I expect others more mechanically inclined will be.

I have a 99 stick 360. When I turn left or right I hear a sound of something sliding back and forth behind my head. Sound like a mens ring on a pencil sliding back and forth. Any ideas?
