Hi Barry,
As you have discovered, this is not a simple deal to get perfect. Dave Castelhano at Servizio in Florida (Dave is my son) can do it very successfully and perhaps if know how he does it you can find someone in your area who could do the same. No big secrets here just work and Dave likes to help get any Ferrari running right so -
Remove the exhaust manifolds and drill a hole in the runner for each cylinder fairly close to the the block. Then weld a nut or other female threaded device onto the hole so that you can close the hole with a bolt when not using it. Now you can replace the manifolds and with a good exhaust gas analyzer open one cylinder's exhaust runner at a time, put your analyzer probe in the new hole and set each cylinder individually for optimum fuel mixture. We do this to cars with standard set up also but most guys will not pay the cost of the setup. It completely takes the mystery out of tuning the car. And in your case it will tell you if the present set up is unable to give you the optimum mixture.

Some time Back - I rebuilt my 79 308 engine. Bored a new set of liners to accomodate 365 pistons - better compression & oil rings = higher compresssion ratio = more HP. I made a weak attempt to over jet the carbs to increase fuel supply as I thought the new configuration would warrant the extra fuel. I ported & polished the heads, balanced the crank and rods, updated the distributors to electronic controlled and installed a stainless exhaust system. The car runs ok but has some flat spots and backfires when coming down from high RPM's and is clearly running too rich at idle. - I am looking for a Pro that can evaluate the changes and jet and balance the carbs correctly. Needs to be in the tri-state area. Any suggestions?

I think I remember reading Paul Sloan (sp?) is putting one together, a search might turn something up.
