    I don't each much cheese, but a couple times a week I love really good ones with red wine.
    I prefer a dryer cheese, usually from sheep's milk.
    Most are between $16-$22 /lb. so, not cheap!

    Lately:
    - Corobes
    - El Trigal
    - Manchego
    - Brenta

    What are some others to try?

    My favorites:

    Gruyere - the real stuff not pasturized

    Livarot - great with calvados

    Shropshire blue

    St. gougivale - like st. andre but much creamier and not processed

    fresh buffalo Mozzarella

    Montgomery chedder

    I am French and our cheeses are very good, but I made a dinner recently where there were only English cheese: Stilton, Caerphilly, Cheddar, Cheshire, and it was a delight for our taste.

    Never had Farm House, but extra sharp cheddar is my favorite.

    Billy, I'd say a couple times a week is quite a bit of cheese.:;)

    If you like a milder goat cheese with a little twist, try Drunken Goat cheese. It's soaked in red wine. It's a firmer, very mild, cheese.

    I haven't really found a Manchego that did much for me but would like to.

    Serve the drunken goat with some great Serrano ham, a warm, crusty baguette, and a nice glass of wine and I'm a happy man!!

    You guys need to try Brenta from Italy. Same vain...fantastic flavor.

    Morbier - from Jura mountains. with ashes in the middle...


    Epoisses - a real stinker from Bourgogne. But it tastes divine

    Swedish Västerbotten. - loads of taste! really good!

    Gamle ole. - Danish cheese the is really smelly but very, very good!

    There is a small farm in upstate NY that make a hard cheese with hops. There are literally flakes of hops in the cheese. It is simply amazing.

    Delice de Bourgogne form Didier Lincet. You can find it at a Whole Foods for sure. It's not stinky but totally creamy and delicious (Triple cream I believe). Spread it over a baguette and you'll be in heaven. Enjoy.
