whoa, what time is dinner!?!?! How many will be feasting on all that?? We're driving to the folks in Jersey Wed, thurs I'll be doing most of the cooking for 5: - Prime Rib roast (I would have picked leg of lamb, but mom and wife overrulled) - smoked turkey breast (Amish market) - Corn Pone, my favorite side: mix 1 can of creamed corn, 1 can of reg kernels, drained, melted stick butter, 8oz sour cream, pack of cornbread mix, S&P, optional extras (bacon, cheese, chives, jalapenos, etc) then pour in a heated cast iron skillet and bake at 375ish for 40 minutes or until set and golden brown on top. YUM! - homemade cran sauce - pumpkin crab soup - Brussels sprouts blanched then browned with onions and guanciale - oyster stuffing - wife's pumpkin ginger spice cupcakes - pumpkin pie (from Amish market) damn now I'm hungry!!!!
We are guests this year so who knows. Wifey is baking pies to bring, all from scratch, Cherry, Apple, Pecan and Pumpkin(our jack-o-lantern actually will be the pie). I suspect her pies are reason for the invite.

Fried turkey and pies. That's all that really matters. Question: Why isn't bacon part of the traditional thanksgiving feast? That needs to change.
I have never had a fried turkey but was thinking about getting a fryer tomorrow, I have heard about this for years and people I know swear by it, is it really that much better fried?
I cooked one about seven years ago and it sucked. My guests requested it this year. That's why I'm doing the Turkey Breast as backup. I used to fry them in oil and it was a mess, but really good Turkey. Last year, I purchased a Char Broil infra red Fryer and it works great. No oil to mess with and the Turkey comes out great!
Fried turkeys are really pretty excellent eating, but the Pig is right, they are a mess. I have been thinkig of picking up one of the infra red friers for a couple of years and just may pull the trigger now; glad to hear it actually works. Mark
My menu this year: 1) Brined turkey 2) Mashed potatoes 3) Homemade stuffing 4) Mac 'n cheese 5) Roasted squash 6) Homemade Italian bread 7) Stuffed mushrooms 8) Stuffed clams 9) Sausage bread, and 10) Baked brie I'm sure I'm missing one or more items, but I cannot remember anything else now. Mark
Easy to do once you have the set up. Peanut oil is good but $$$$ inject them the day before with some cajun mix smaller birds work well 10-14 lbs if you do one you can make a afternoon of it and do another 6 for friends, just plop them in one by one. wouldn't do it on a deck in case of overflow of oil, outside on lawn best.
