    Tom, the cooked version was started in a super hot charcoal grill, then left to absorb smoke from some mesquite chips.

    I was feigning a modicum of sophistication for the sake of a photograph - note the cloth napkin as well?

    Post photo, I ditched the lot and went all proper caveman. ;) Though I DID accompany it by a nice grenache-shiraz that I quaffed from spiegelau stemware.
