    We've got between 15 an 20 coming over so it'll be 2 pork shoulders, a turkey breast and Italian sausages in the smoker.... 4 Lou Malnati's deep dish pizzas we ordered..... wings, hummus, salads and deserts.... and BEER! :D

    I don't really know yet; planning is still in the works. Smoked chicken wings, smoked nachos, and mozz stuffed meatballs are on the menu for sure. I think I'll also make a beer cheese dip to go along with cold cut and cheese trays. Beer, bourbon, and scotch are guaranteed.

    It's really pretty simple. Just layer chips on the bottom of a pizza pan or something, then add whatever toppings you want. I usually throw on cheese, red onion, some form of meat, green onion, tomatoes, black beans, and cilantro. Then another layer of chips and all ingredients. Then another until its built up as high as you want. Once you have it all put together, throw the whole thing into the smoker until the cheese is melted all the way through. Adding that smoke flavor really transforms simple nachos into something so much better.

    For the meat, if you have leftover pulled pork, that's the best. I've also used chopped up brisket and meat pulled from leftover ribs. If I don't have any leftover smoked meat, I season up and grill some chicken breasts, slice it, and us that.

    1-800-LOU-TO-G0 FTW! :) Wasn't my favorite pizza, back when I lived in the Chicago suburbs, but it was sure in the top 10!


    We're going to a party at a friend's house & our contribution will likely be meatballs & beer.

    Yes, tortilla chips, but I am not loyal to any brand. I just see what the store has and go with whatever I am in the mood for. I usually try to find "restaurant" style chips; the ones that more closely resemble actual fried tortillas (like the ones depicted below), but have also used whole grain and/or quinoa chips.

    I haven't been to Chicago in 30 years, but if I ever do get back out there, I definitely want to try that pizza! I was fortunate last fall when I was in NYC to try the original Grimaldi's Pizzeria in Brooklyn.
