Does anybody know why cameras have such a hard time capturing shades of red accurately, especially in sunlight? And any tips for overcoming this problem?

I personally think MY Olympus does a great job.
Here are 2 pics, taken around 2-3 weeks ago. Top pic is a mate behind the wheel of my 348 and I used his Sony Cybershot camera to take the pic for him. Bottom pic was taken with my Olympus Mju Mini. Both 5mp. Very different shades of red for sure. I reckon my Olympus does a great job reproducing the red shade. That Sony is crap IMO. Carl Zeiss lens in that one. Very average......

Part of it is the time of day you take the photo, high noon is the worst. I too the pic in my profile using a Nikon Coolpix S4, I think it captures the red quite well...

    Experiment with filters.

Polarizing filter could help, and will improve the way the glass looks, too.

Indirect lighting will help Don't shoot in bright sunlight if you can arrange not to.

It's been a while since I wandered around photo sites, but I think a skylight filter might be of some help also.

There are also color enhancing and color balancing filters if you really want to get it right.

    Check Cokin filters. http://www.cokin.co.uk/

A circular polarizer will certainly help kill the glare which is perhaps washing out the red in the images. You can post process in photoshop - play around with curves, hue/saturation to compensate.

I found that my older camera didnt like illuminated reds - like my Audi's instrument cluster - I had to seat the camera to be able to take ashot without blur.
