    Capital Grille in the fashion show mall accross from the Wynn.
    Mon ami Gabe in the Paris.

    Both are great places with great service.

    10 years ago we would be hard pressed to find a couple of 1st order world class restaurants, now we have many. It really depends what you want. If I have to narrow it down to a couple here would be it:

    Steak, Delmonico Steakhouse (Bone-In Rib Steak)
    Italian, B&B Ristorante (Braised short rib)
    French, LeCirque (Le Cirque Salad, Deserts, menu changes regularly)
    Seafood, Michael Mina (Tuna Tartre at its finest)
    Joel Robuchon (If you want to spend a mortgage payment to dine at one of the handful of Michelin 3 stars in the US)

    Are the Vegas outposts (Nobu, Wolfgang Puck's Spagos, KOI) just as good as the original restaurants? Seems like the city is a foodie's dream. With the new hotel opening (Trotter, Wolfgang Puck's CUT, Emeril are among the hotel's new options), seems like the city is getting another shot in the arm.

    Does the city have any great off-the-strip restaurants (stand-alone and in the local casinos)?

    Some of the other brands are very good. Some are kind of a mixed bag.

    Example Good
    Wolfgang Puck- Spago, Postrio (both great)
    Nobu

    Mixed Bag
    Rao's
    Wolgang Puck- Lupo

    Regarding off strip there are a couple of noted places:
    Rosemary's (was great about 5-7 years ago)
    Piero's (old school vegas hangout by the conv. center)
    Nora's (one of the better Italian restaurants off strip)
    Also a great local Mexican place, Lindo Michoachan

    Agreed, the addition of the Palazzo will add 4-5 1st class restaurants right out of the gate. Also Wynn- Encore, Echelon Place and City Center will add even more great restaurants over the next couple of years.

    I'm kind of looking to see what the Mandarin Oriental does when it opens in CityCenter. They usually create some cool, sexy, yet first class dining establishments. I need to move to Vegas. :(

    I ate there just this last Thursday. Some of the worst food I've ever had in my life and the group I was with agreed. Anything pasta (3 different pasta dishes at our table) tasted like it was made from pure salt. My fish was overcooked and dry, that is, when I could find a piece without bones in it, and the manager was rude and arrogant.

    I am sorry to hear that. I have been there with friends and family on many occasions and the food was excellent as well as the service. If fact on our last visit the staff gave us a complimentary set of sides just for us to try. Unfortunately, restaurants are not an exact science and can put out a bad meal. That can happen, however, I am sad to hear the management did not try to make it right.

    How is the Paris Las Vegas' Eiffel Tower Restaurant?

    I need to get (and move) to Vegas. A 24-hour city with a ton of entertainment, world-class dining in quality and depth, and one of the best (if not the best) business environments in the country. Seems like the city and state has the ability to attract talent to your business.

    KOI just opened up in Planet Hollywood (formerly Alladin). While you're there, enjoy the soothing sounds of the XM radio system I installed there ;-)

    I don't have the budget to dine at the great restaurants yet. But being a hospitality bluff, I love to follow the movements of Vegas. All Vegas needs now is a Gordon Ramsay restaurant (however, I don't think he's too keen on Vegas).

    Delmonico in the Venetian is my favorite restaurant anywhere. I don't even need a menu. Keep in mind, I'm a meat an potatos guy.

    Start with Truffle Oil Parmesan Potato Chips. Then Ceasar salad. Filet Mignon, medium rare. Baked potato (or just finish off the potato chips). A bottle of red wine. (Twice at that restaurant I ordered a La Jota cabernet, and they mistakenly brought me the anniversary bottle. A $50 difference!) End with Chickory coffee creme brulee. MMM mmm good.

    Anyone hit the newest resort, Palazzo, yet? I've heard that it's only half-open (restaurants, shops, ect).

    Yep, the casino and some restaurants may be open soon but the hotel may be closed for awhile.

    The news stated that there talking to a design firm to see what the best course of action is. Redoing it or changing it alltogether.

    It'll be interesting. I'll be looking at re-locating to Vegas (hospitality major) sometime. If I can land a job where the salary is reasonable, along with the cost of living, I might consider it seriously.
