Peanut Butter

Ok, I'm curious. What is it? What is quinoa?

 

The dish is inspired by the African "Mafe" stew. Spicy, peanutty, beefy, goodness. Being lazy, I'm throwing it all in a dutch oven and cooking it at once. Usually it is served over rice, but I have quinoa on hand so that's what I used. I don't know how to describe quinoa other than it is a grain from South America that's really high in protein. The toxicity arises from the saponins on the outer shell but it is rarely fatal usually just a case of the ****s. Rice gets boring, so I try to keep some quinoa and barley on hand as alternatives.
