After a long search, I've finally acquired a 360 Challenge Stradale Steering wheel for my car with an airbag but need to dye the airbag from yellow to black (anyone want to guess who I bought the wheel from?). In reading the Leatherique dye instructions it seems to be pretty straightforward but I'd prefer to remove the Ferrari logo from the center of the airbag before I dye it and then reinstall it but have no idea if/how it comes off.

Does anyone have any insight to how to do this or if I should mask it off and dye around it?

I don't have a CS steering wheel but generally the air bag unit is held on with two (or more) Torx safety fasteners (I believe the one on the regular F355 steering wheel is a T-30 (safety). If you use a normal Torx bit it will bugger the fasteners and then you have problems. Once removed, just follow Leatherique's instructions. BTW, I found that using circular motions and a lint-free terry cloth towel worked well for application. Use the same for removal and try cheese cloth for the final buff. Good luck.
