For me it was probably goat blood soup. It took me a few tries before I got the privilege of ordering it. They only kill so many baby goats per day, so if you want to be sure to get the soup, you have to arrive when the restaurant opens at 11 am.

You could also order the baby goat's head, but I'm not sure exactly which parts would be edible.

I've also had cow eye tacos. No photo, unfortunately.

Only in the sense that if you anticipate something for long enough, you don't care if it's good or bad as long as you have it.

Next I want to find a tepezcuintle restaurant.

At this point, saying I ate a slug on a dare would be as if I said I once had
    a marshmallow.

So I'll just shut up and go be nauseous elsewhere.

I thought of another addition, though less unusual. I went to a Oaxacan restaurant and got a large bowl of tiny fried crickets as an appetizer. Like everything in Mexico, you enjoy it with lemon juice on a tortilla if you'd like. They were salty, and then so bitter!

My mom has that exact same glassware the head is in. :)

I believe I've eaten cat. The chinese buffet in college was supposedly shut down for skinned cats being found in the freezer. Had just eaten there a few days before. I have to say if I did, not bad at all.

Escamoles, fried ant eggs with guacamole wrapped in a corn tortilla. They are actually good once you get passed the idea your eating unborn ants :)

Once I tried a calf brain quesadilla by mistake. Not good, I spit the first bite.
