India..........They sure have their food dialed in!

    Here's tonight's dinner, a quick curry simmer sauce with browned chicken. More and more, I'm really getting into eating Indian food. The sauce on this dish was Patak's Jalfrezi Curry, one of about ten I have tried already and I love all of them. Topped off with a Nan, its just great stuff! This could become my favorite food in the world (......................next to a perfectly grilled rib eye with fries) as I have yet to be disappointed with any dish I have either made or ordered in the last year!

    How about you? Fan of Indian food?

    I've been to India on business many times, I've always found the food there to be much better than the Indian food we get here in the US- probably not a surprise.

    You've just got to stay away from the fresh salads, that'll shorten your trip.

    you should balance your diet out with some vegetables...and there are delicious Indian recipes for veggies too.

    The spice mixes are great. You can add plain yogurt to make it a thicker curry.

    If you want to do it from scratch, the following chicken recipe is pretty easy:
    Slice and fry up one white onion until brown.
    Put in blender, add:
    Lime juice - 2-4 squirts
    Chilli powder - 1/2 teaspoon
    Turmeric - 1/2 teaspoon
    Garlic paste - 1/2 teaspoon
    Salt - 1/2 teaspoon
    Plain yogurt - half cup
    Cumin -1/2 teaspoon
    Pepper - to taste

    Blend until it's mixed in nicely--you are looking for an even color and consistency.
    Chop up 1/4 a chicken, wash and marinate with your mix for at least 6 hours.

    Barbecue or cook in olive oil. Garnish with cilantro (you could have also thrown it in the blender earlier). Either way it's delicious.

    Kitchen's of India Butter Chicken Curry. Cut up 1 lb. boneless skinless chicken breasts into cubes and place in ~3qt dutch oven/pot. Add 1 cup water, 3 tbls butter and curry paste from package. Simmer 20 minutes. Serve over basmati rice with your favorite vegetable (I particularly like green peas and cottage cheese curry) and Nan.
