I'm about to update the OS on my iPhone for the first time. I want to know, will it delete any text messages, notes, etc.?

As noted, it may, but it really does not if you follow along, and let it backup your phone prior to updating. Everything should remain when it come back up.

No. It backs up all your data before re-installing the OS.

In the "ask me how I know" category:

If you have an older computer/OS it is possible to update the phone OS to a spec that your computer and itunes version won't recognize. I use an older iMac and had occasion to update/synch my phone on my wife's MacBook Pro. I had to update to Leopard (OS X 10.5.8) and update iTunes in order to be able to synch phone w/my (older) iMac.
