The Mark Zuckerberg thread got me thinking about this. I don't hunt anything I won't eat. I will share some of my table fare and recipes. I am not a cook, but do enjoy cooking my wild game.

beware of venison, moose, elk, and such. At least stay clear of the brain and spinal cord. There are endemic cases of prion disease in North American deer/elk.

Jennie did this up last week with the Axis backstrap. Bacon wrapped with some crab topping. So good didn't need the topping, but I wasn't complaining.

you aren't the first person to say that who has seen the pic. :) my answer to the other person was the bacos were homemade from wild boar tenderloin. ;)

Sirloin of elk or deer - grilled

chantrell lasagna (swap the minced meat and bechamael sauce with cream stewed chantrells and loads of grated parmesan cheese - in Sweden I use a chhese called Vasterbotten. It is not too far off a matured parmesan)

and a cloudberry pesto. Make a pesto and chunk in some cludberries...

serve with a nice zin or shiraz

I have a hard time with backstrap steaks. Any guidance on getting it a little more tender?

it is pretty lean, Jennie would be the expert, but meat tenderizer (beat it & powder). bacon wrapped always good. eat it rare or medium-rare.

on a scale of tenderness from most tough to most tender goes… old bucks, bucks, does, and fawns. ;)
