I know this issue has been addressed before, and that dead batteries are common, but i have a specific issue with my car that i cant understand

If i activate the alarm and let the car sit, it starts back up no problem

If i let it sit for 2 days without alarm on, battery is drained.

Clearly the alarm doesnt drain the battery - what does the alarm shut off that could be a constant draw?

I can't answer your question but start by getting a battery tender.

This may or may not be relate to the cause you are looking for but how do you shut down the alarm for two days? I thought the alarm (immobilizer) is automatically set after 120secs (for 360s)?

You need to do a current draw test first. Then post the results. You could have a door handle micro switch issue, alarm problem, immobiliser issue, even the radios have been known to cause parasitic draw....
