Anybody have a really chocolate chip cookie recipe?

    I hane two friends that make amazing choc chip cookies. They're soft and chewy and dark and rich. I've worn out my ability to ask for them for more treats, and asking for the recipe is gauche. I've been trying recipes from the net, and nothing knocks my socks off yet.

    So, I'll throw a line out here. I don't need nuts or oatmeal or anything in my cookies beyond chocolate chips. Let's see what you've got!

    My favorite so far is here, with some minor alterations to the brown sugar and vanilla.

    Get a box of Ghirardelli Caramel Turtle Brownie Mix and some pecans - Instructions on the back for cookies. Though they're less "white" than regular choco-chip cookies, you'll be a hero - hit up for recipe, etc..

    The truth is that the original recipe by Ruth Graves Wakefield, owner of the Toll House Inn from 1930-1977, is still the basis for most chocolate chip cookie recipes. Of course, the original is found on every bag of Nestlé Toll House Semi-Sweet Chocolate Morsels. Most successful recipes simply tweak the original to reach their desired result. Take the original, substitute higher quality chips, and then play with the sweetness, softness, density, etc. by adjusting the levels of the individual ingredients to suit your taste. When it comes to "chopped nuts," most recipes either use chopped walnuts or drop the nuts entirely in favor of more chips.

    The original recipe usually results in a cookie that is slightly chewy in the middle, but fairly crisp around the edges. Of course, some people (myself included) like a slightly thicker/softer/chewier cookie. For this, the dough needs to spread less during baking, which can be accomplished by 1) increasing the amount of brown sugar in relation to white sugar, 2) adding an extra egg yolk, 3) refrigerating the dough ahead of time.

    I've also heard of people substituting shortening (butter-flavored if you choose) for half of the required butter, and/or substituting baking powder for the baking soda, though I have never tried either.

    We may be close to a winner here. The video posted shows a double chip cookie at the end that looks a lot like my neighbors cookie. I'll try that when the current batch is gone. I also like Waynes thought about baking cold dough, I've heard that one before.

    He doesn't give measurements in the video, but here they are from the website. It looks like he has pretty much halved the standard recipe, so adjust according to how big of a batch you want.

    1 cup plus 2 tablespoons all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup (1 stick) unsalted butter, very soft
    1/4 cup packed light brown sugar
    1/2 cup white granulated sugar
    1/2 teaspoon vanilla extract
    1 large egg
    1/3 cup semi-sweet chocolate chips
    1/3 cup white chocolate chips
    1/3 cup milk chocolate chips

    Mix the softened butter and both sugars. Stir in the egg and vanilla. Sift together the flour, salt and baking soda then add to the wet mix. Once combined, add chips.

    Cook for 10 minutes at 375.

    My kid just said "these are as good as our neighbors". I used all the same kind of chips.

    I think you used the video recipe I posted above. I think the least you can do is send me some cookies! :D:)

    I'm glad it worked, Chef John's Foodwishes videos are awesome, he is hilarious. I need to attempt to make the chocolate pecan pie recipe he posted a while back since I love me some pecan pie!

    YUP! I don't like having to watch a video though, I wish he'd publish the whole recipe. I had to go through it to find how long to bake them and at what temperature.

    I'd send you cookies, but my kids ate them all already. Seriously. That and I burned the last batch because I was watching football and forgot to set the timer.

    I'll make a whole batch next time, rather than the half recipe he shows.

    Truckers like adding several different ingredients to the mix.
    Coconut.
    Rice crispies.
    Bread flour.
    Mung bean flour.
    Sesame oil.
    Flax seed oil.
    Captain crunch.
    Chocolate liqueur.
    Remember to have lots of coffee on hand because when the dispatcher sends out that load info you gotta be ready to run.

    Got an old but still perfectly functional Kitchenaid mixer off craigslist a few weeks ago so my wife mixed up a batch of CCC per the recipe on the Nestle Dark Chocolate Chip bag.
    Put peanut butter in half the mix, none in the other.

    Came out really tasty, but just a bit salty because we didn't have any unsalted butter, and she added salt per the recipe.

    In fairness the recipe didn't specify unsalted, and none of the cookies went to waste, but next time we'll know.

    We also didn't have any vanilla extract but didn't notice anything lacking.

    If she didn't pull me away I could have eaten half the cookie dough raw it was so good....

    Another batch last night with the winning recipe. I did equal parts of brown and granulated sugar, and then 3 types chips. I'll do it that way again.

    The Toll House bag recipe is terrific. You can jazz it up with whatever chocolate you want but the basic cookie recipe is the best. And yes you need to use unsalted butter.
