Why did Porsche have an adjustable boost control knob on their race cars?

Simple, Dial a death (adjustable boost) was/is no different than adjustable brake bias, or adjustable anti-sway bars. Adjustability allows for you to fine tune the car to suit the conditions.

In the case of boost / you could dial down the boost to refrain from overpowering the track, or the conditions, and of course turn up the boost if you required extra power to overcome your nearest competitor.

Every thing you said makes good sense and is what I thought except this last comment
I have trouble believing a race car driver would not want all the HP. available through out the race and control deliver of it with the throttle pedal and not a knob on the dash?
What you said about car balance makes the most sense to me. Thanks for the reply.

The engine can take full boost for a short time, but it will overheat if left on full all the time.

They dialed the boost back at certain points in the race to cnserve the engine.. with the power they delivered there was no need to run at full boost over an entire racel
