As Tim said, do all four at the same time. The handling will be significantly compromised if you only do one pair.
It appears that Bilstein offers rebuild services of their OE shocks. Could be worth an inquiry. Service
+1, Rob at Delta Vee did mine when I had my car in for its last major and i am extremely happy with the results and pricing.
And Rob at Delta Vee did all four of my Challenge car's shocks last year. I'm very pleased with how my car handles now.
I went directly to Bilstein in CA with mine. Much much better price than delta vee after they jacked up prices last year.

I really want to like Delta Vee and I appreciate that they support our cars, but that price structure change really (ahem) dampened my enthusiasm for them. How did yours turn out and how long did the process take?
It took the 4 weeks or whatever they said going in it would take. They replaced a rod on one of them so it was an extra $60 or something like that. Overall I have no complaints about their service. The result seemed fine and I'm guessing built to original spec since they made the original shocks. When I got them back but I didn't have much to compare them too because the car was new to me.
I don't think anyone is trying to hide anything. If I recall I think I paid something like $125 each with Bilstein and delta vee jacked their price up to something like $400-500 each. I could be off but those numbers are close. So $500 vs. $2000 for all four corners.
But don't forget, one comes with a lifetime warranty (aka Ferrari tax) so in 16 more years when you need them rebuilt again you probably just pay for shipping if they're still in business.
While we are talking about shock rebuilds. Would people who did have them rebuilt be either bilstein or delta v also recommend new springs, hr springs, or someone elses springs or is the shock rebuild enough. I guess what i am asking is do the springs really for all practical purposes need replacing or does the shock rebuild get you most of the way there. Thanks
Matt I guess Bilstein went up abit too because last year i was quoted $125.00 each. I think DV does abit of an updated on the rebuild it's not just the warranty thats better. But still thats a big difference.
