    Sounds great! I need to look for those too next time I hit Costco, good stuff to keep on hand in the freezer.

    Adding cheese to seafood in Italy might get you prison time but I do it and yours sounds like a great combo! :)

    Since you mention crawfish, they already have them at HEB. At least at the one I go to. It's crazy early.

    My friend read an article that said this year is supposed to be a great crawfish crop, so perhaps that's why they're already starting to sell them.

    Wow. That is early. Wonder if it has to do with the crazy warms temps. It was in 70s up here today. We have roses still on the bush, and I picked a final few tomatoes last week!

    Yeah I had a bag that I kept in the freezer for awhile. Maybe it was Fred Meyer (our version of Kroger) where I got them. I might be there tomorrow anyway, I'll take a look.

    Tonight, being Christmas Eve, which is our main Christmas celebration, we will have a few slices of Norwegian smoked Salmon as a starter, then Pork Schnitsels with Bohemian (Czech) Potato Salad. and Norwegian "raw stirred" Lingon berries. A bottle of Sassicaia.
    Then we open the presents! To that I think a glass or two of something stronger will be nice.

    Ah Merry Christmas.

    We do two dinners. Traditional ham last night. But I don't like ham. Went to a local bistro restaurant and had a beef dip sandwich around 3pm. Then did left over Chinese food while my family ate ham!

    The bistro was reviewed in Vancouver's main newspaper last week. They rated it highly and praised their Montreal smoke meat. The beef dip, used a very cheap pot roast and was very average. Would have been a home run if they used prime rib.

    Tonight is prime rib, twice baked potatoes, some carrot deal in a cheese sauce, etc.

    Sounds heavenly.

    Did ham with tangerine glaze. Carrots. Baked sweet taters. Corn pudding. The glaze was home made. The juice of 15 tangerines + a small handful of brown sugar + dash of cinnamon - reduced to a sweet, but not too sweet, glaze. Sort of a gastrique without the vinegar.

    Corn pudding = can of creamed corn + egg + splash of cream + box of corn muffin mix. There was a bacon cheddar cheese ball lying about that my wife's colleague made, so I melted it in the microwave, and added it to the batter. Baked the batter for about 45 min at 365. Yummy. Great twist on corn...T

    All sounds good except the ham!!!

    Christmas eve dinner we usually do a ham and turkey. But for the second time this year, I forgot to put the turkey in the freezer. Christmas dinner is always prime rib.

    Ham can be one of those dishes that gets old fast. I'm making up a batch of this ham and bean soup with leftover ham

    Picture of the above recipe, about 3.5 hours into the simmering. Removed the ham bone a half hour ago. Removed meat from bone. Probably leave it for 2.5 hours more.

    Crazy simple - I used garlic and onion powder. So, soaking of the dry beans was the only major chore, and I did a rapid soak.

    Per the Whole Foods website...

    "Quick soak: Put beans into a large pot and cover with 2 to 3 inches of cool, clean water. Bring to a boil then boil briskly for 2 to 3 minutes. Cover and set aside off of the heat for 1 hour; drain well."

    Yumbo!! Good looking rib eye. Wife and I had dinner at a friend's last week and our friend did the wrapped asparagus deal, but wrapped in prosciutto di Parma. Tasty side. Hope your holiday weekend was a great one...T

    Is there a special spiraling tool? What's the easiest way to remove the bone from the ham?
