    Oh oh, its 4pm and was thinking of going out. Now realizing most restaurants are closed today. So far have nadda for dinner!

    We also had home made meatballs :)
    Beef pork and turkey
    Home sauce ala uro - simmer down San Marzano tomatoes, onion and some butter for an hour.

    No pics - ate it too fast :D

    Soak bread, cut into small pieces, in milk, then add that to your meat mixture?

    My grandma used breadcrumbs, but you have to be careful, too much and you have mini meatloaf...T

    That's what I try to use also. They are the best. :)

    It was good. I was only able to find pre-cut pancetta and would love to have had a big chunk like they had in the video I posted. Would have been better with some bigger bites of the pancetta. I think I overdid the parsely a bit too. Good for first effort though.

    I've seen other recipes made with guanciale which sounds even better than pancetta but good luck finding that in my area.

    I've had guanciale at a restaurant. Great stuff. I've never seen it at a store, although I've not looked hard for it...T

    Guanciale is essentially cured pork cheek. Lots of stores around here carry "Jowl bacon" which with be a fine substitute!

    I do likewise when pressed for time. The Central Market grocery in Southlake - fancy DFW suburb - sells fresh pizza dough for $2. It's a steal. Brooklyn Pizza Dough can be kept in freezer. Defrost a day or so before you need it...T
