    Well I just had a couple small slices by themselves for a quick lunch before heading into work. The rest went in the fridge and I'll have a more proper meal of it probably tomorrow. Came out pretty tasty.

    Comfort food week at the ranch continues!

    The mother in law and wife requested tuna casserole.

    Sure! We had everything in the pantry. Can of tuna. Can of peas. Both drained. Leftover (hence already cooked) spaghetti, cut up. Cream of mushroom soup. Couple of tablespoons of breadcrumbs. Ditto French fried onions. Handful of mozzarella. Mixy mix. Sprinkle a bit more mozz, breadcrumbs and French fried onions over the top. Bake at 400 for half hour or so until bubbly and a bit of carmelization on the top. Yum. We're eating like it's 1979!

    Hi Gregg... I'm with you. I can't recall the last time I ate tuna casserole. I think my Mom may have made a box of Tuna Helper, back when boxed foods were starting to become the rage...T

    Actually I think I have a box of Tuna Helper in the pantry. If I had not already decided on my lunch for today and had not already started thawing the meat, taco's w/Rotel and Old El Paso taco seasoning in 'stand and stuff' shells, I would go there.

    Tomorrow is another day though. lol

    I don't like canned fish or meats. I wonder what tuna casserole would be like with real tuna. Trip to Costco for tuna steaks maybe in order.

    Yeah. I can't recall the last time I had packaged tuna. Wife bought a large box of tuna fish in foil packages, as they make it easier for the MIL to fix lunch herself. But, the old gal got tired of TF halfway through the box, and I was raised to not throw food away, so voila! Tuna casserole!

    I'd be hard pressed to use good fresh tuna steaks on something like tuna casserole. That'd go on the grill, with a nice pineapple-mango-habanero relish to top it off. Yum!

    I have used the tuna steaks from Costco to make tuna salad sandwiches. I'll wait for my brother or my parents for Costco. Looks crazy when all you buy at Costco is 5 gallon water jugs, coffee and maybe a bag of pot stickers.

    Yep had one last night. Too much running around today to cook up taters and stuff to go with it but I will do that tomorrow.

    I've never cooked black eyed peas. Was gonna look for some at the store today but forgot. I swear I need to start making lists to take with me and then pin them to my shirt or something.

    Normally buy them canned and just heat 'em up or is it much more elaborate than that?

    As for canned tuna the only one I will buy anymore is Costco's Kirkland brand chunk albacore. Any of the others are just junk but they do a pretty good job with that one.

    I haven't had tuna casserole in years either. We never had it often but did once in awhile. the one my Mom made more often she called three-in-one casserole. Brown up some hamburger, grated potatoes on the bottom of the pan, then corn, then the beef and cheese on top. It's pretty tasty but I haven't made it in years. I think one of my sisters does it pretty regular. I've always wondered how it would turn out with frozen hashbrowns or home fries instead of fresh potatoes.

    I prefer tuna fish sandwiches with fresh fish, 'cause you can make bigger chunks than you get out of a can, which makes for a more satisfying sandwich in my opinion. I grill tuna steaks, flake it up, add a touch of mayo, olive oil, dill, onion powder, garlic powder, as much good horseradish as you can stand, mix but don't pulverize TF into small bits. So, more of a fold than a mix. Spread on good ciabatta bread, which has been slightly toasted, drizzle over some sriracha. You're sitting in high cotton! 😚

    You had me at "more of a fold than a mix" then lost me at ciabatta (way too chewy/tough) and sriracha (cover's the taste too much) of a good tuna fish sandwich.

    Nope. I buy them canned and wave them up. Most other beans, I buy dry.

    Kroger app has a nice feature that lets you make a shopping list. But, most of the time, I wing it. If I forget something, oh well, it's Iron Chef time in the kitchen!!

    LOL. I like chewy, but any bread is good, even good old sliced bread. A lot of people add celery, carrots, relish, etc. But, I like my TF sandwiches to be more fish than filler, albeit with a bit of heat...T

    My mudda makes a chicken salad that is to die for (forget about it) except she murders it by adding celery, I place my "no celery" order ahead of time when possible. If not it takes me 10mins to pick it all out and by the time I am finished I am not hungry anymore, what are ya gonna do?

    3. Cube chilled breast.
    4. Hellmann's Mayo.
    5. S&P.
    6. Eat.

    Just like any other great recipe...simple is best.

    Safeway has an app called just for you. It gives several hundred items specially sale priced just for you. I use that as my shopping list before I go.

    I had some Italian meat balls from Costco. Had some homemade sauce in the freezer. Made spaghetti and meat balls.

    Sounds cool. No Safeway in these parts. Kroger app lists sale items geared towards things you buy. Targeted coupons still are mailed though.

    Wife bought a big bag of Kirkland/Costco meatballs a while back. And, although my grandma, would spin in her grave, they weren't half bad!

    Ok, I'm temporarily sick of leftovers. So, salmon on the grill. Cooked it on a ripping hot griddle for six mins, skin side down. Temps registered above 500 F on my IR thermometer. Rested 5 mins, covered. A little fresh cracked, EVOO, and lemon slices on top before grilling.

    Made a peach glaze from peach juice, pureed peaches, dash of cinnamon, fresh cracked, which I reduced on low heat for about hour.

    Served with broccoli, brown rice and a nice red wine.

    Best part? That crackling fish skin!

    Easy peasy! I boil chicken breast as a treat for our dog about once a week (yes, she's that spoiled!) and I just can't help munching on a piece or two. Call me odd, but I just love freshly boiled chicken boobs, before they've had a chance to cool and dry out. So, your recipe sounds great to me...T

    Dude are you cereal?

    My dogs get chicken breast w/rice, pea's and carrots ie they eat better and more than I do 75% of the time.

    I'm getting a Turtle for my next pet.
