    Hey is this the dinner thread or the facebook thread? ;) I let my brother and sister talk me into a facebook page but I ended up wasting too much time there. I'm in the process of closing it down for good. It is nice to keep in touch with people who are not local.

    And as far as I'm concerned dinner with family is always good no matter the food choice. :)

    Back to food!

    Salmon tonight. Wife had this herbed goat cheese, so I cut a few rounds of that, placed it on top. Dill. Lemon slices. Cook for 6 mins on a hot griddle. Rest for 5.

    Served it with cranberry sauce (from a can!), steamed broccoli, & my world famous sweet carrots (brown sugar, it tastes so good!). Wife bought some citrus beet salad at Central Market. Meh. She said my beet salad is better! 😍😘 I agree.

    Looking good!

    Saw the idea about using leftover taco meat so we had taco salad tonight and will use the mac & cheese, plus meat and onions, etc to make enchiladas over the weekend.

    super easy recipe...mix 3 tablespoons soy sauce, 1 cup of butter, 3 cloves minced garlic and some parsley, melt the mix (stove or microwave), put chicken in pan, pour melted butter mix on top, broil 20 minutes.

    get chicken thighs with the skin on them and they're nice and crispy :)

    Dinner was fun!!! Decided to do more good deeds and pop in to see my great aunt. She is 94 and lives alone. We try and visit her a few times per month. Anyway, she had some Icelandic cake, its good. Her friend made it, old family recipe. Family is Icelandic. They call it an Icelandic Christmas cake. But its actually a Canadian Icelandic invention.

    Enchiladas would be good. We only have one Mexican restaurant in town. Its not very good. To get good Mexican, I have to make it myself.

    Bought the dog a family pack of boneless chicken breasts. He can't eat them all in time. So I have to eat some. Decided to toss them in the crock pot. Toss some onions in, add some BBQ sauce. Let it simmer all day. Got some Portuguese buns. The breasts pull apart, almost like pulled pork. Very basic, but pretty tasty.

    Haha. I did the same. Bought a big pack of chicken breast tenderloins for the pooch. @ Costco. Boiled them up this afternoon. Leftovers, however, for us lowly humans! 😀

    Tuesday, so its movie night. Brother doesn't like Japanese. Even though I feel like rolls and some sashimi. We'll end up at the French Canadian bistro. Brother likes it despite rating it a 6 out of 10.

    Wow. You went to the source! 😃

    Tonight was akaushi (think Kobe beef but better) burgers on the grill. Put some Danish fontina cheese on top with some pancetta. Served with steamed broccoli, homemade mashed taters (3:1 Yukon gold to Idaho russet), and homemade guacamole. Washed down with a really good $8 (yes, eight beans!) Cotes du Rhone Villages that the beloved picked up at Costco. Dog and I are narcoleptic now! :)
