What's For Dinner?

That looks good. I've wondered about Kirkland wine and booze. They usually keep the quality up on their brand. Might have to try a few.

 

It's hard to beat Costco prices, Jdubbya, and the quality isn't bad, at least to my taste. The Kirkland wines are good for everyday enjoyment with dinner...T

So here I am watching another food show, an international episode, and they showed yet another Kobi burger and then a light bulb appeared! I realize there are huge differences in the beef compared to commercial 80/20 ground beef but how close could one get?

Instead of buying "off the shelf ready to cook" what if a lean inexpensive cut was combined with either beef or pork fat (or both) for a 70/30 mix at half the cost of Kobi or even Wagu? I am going to experiment and I doubt any will go to waste.

Thoughts?

Based on how the fat looks after rendering, I'd would guess that a good pork product like pancetta might be the secret weapon. My biggest worry would be its flavor being too powerful for regular beef. But, pancetta tasting food is not usually a bad thing.

But, you should check out Central Market, Gregg. Last time I checked, admittedly a while back, ground wagyu was reasonably priced there. Reasonable in comparison to regular steak cuts, not regular ground beef...T

 

I just meant ground pork fat that one can find at most grocery stores, Pancetta would go on a pizza.

Issues with going to the "one and only" Houston location of Central Market...

1. It is 15 miles away.
2. Ground Wagyu, ready for burgers, is $11/lb!!
3. Just for fun I asked for the price of their Wagyu ribeye's..are you sitting down..$50/lb!!
($50 for a 1lb uncooked steak that will lose 10-12% of its weight better come with a coupon for a "Happy Ending".


I think I will try some experimenting for now.

 

Kirkland brand means several things. It could be a name brand product that wants to hide behind the Kirkland name because of the discount. They don't want to diminish their name brand outside of Costco. Kirkland batteries are Duracell, the dish detergent is Cascade, etc. Costco has a weird rule about vendors making a sole living off Costco. So if you have a successful product in Costco, but limited distribution outside of Costco. They'll usually make you into a Kirkland brand. Both mean Kirkland brands are usually very good. Best of Costco.

 

I've purchased Kirkland Macallen scotch before.

 

Very interesting. Wife loves Costco. Their prices in wine, Kirkland or name brands, are hard to beat. Ditto for meat & such, which can be bought in bulk and frozen...T

Yikes. Those prices are higher than I remember. I guess I'll need to check them out more closely next time I go.

They sell the 18 for a much better price than the branded bottle. WGAF? It all comes out the same in the wash LOL...

Grilling lamb burgers tonight.

 

Got stuck babysitting the nephew. He likes Hawaiian pizza only. So that's what we'll have. Closest pizza place to my house. Nothing special.

Bought a Keurig brewer thing. Makes pretty good hot chocolate.

 

That it does.... I do Hawaiian with pepperoni instead of Canadian bacon.

 

Tonight a dish that I've long wanted to make, pasta ***ioli.

I based it on Rachael Ray's recipe, primarily because it had pancetta in it, and I happened to have some of that magical stuff in the fridge.

Man that looks awesome. Am I looking at Kobe beef? Do you cook it yourself at the table, or do they deliver it like a Brazilian steakhouses?

I sometimes watch the food network in the afternoon. Not much else on.

 

I wish it were Kobe beef!
It can be ordered at certain Korean restaurants but this is thinly sliced beef brisket.
At these Korean BBQ places you cook the meet yourself. There's a wide variety of all types of different meats ranging from sirloin to cow tongue.

Looks great. Now I'm wishing I still went to Torrance frequently.

Had a product in Whole Foods. Once or twice per month would tour their southern California stores. Make sure our reps did their job.

 

Best place for Korean BBQ is downtown LA - there's a mecca of famous BBQ places in Koreatown in LA.
