    Proper Texas BBQ! Actually, it was lunch, but I'm so full that it'll serve as my dinner as well. 😀 That's brisket, jalapeno sausage and cabrito (young goat). Cooper's in Llano, Texas. Worth the 500 mile round trip. Great roads. Great food...T[​IMG]

    Roasted a couple chickens for exteded family dinner Sunday. Threw the carcasses in the pot and made some chicken noodle soup. Always a good thing.

    Excellent. Waste nothing. My grandma would be so proud. 😃

    I usually use uncooked chicken, with or without bones, for a clearer, whiter broth. About every other week I boil up breast tenderloins for dog snacks. Yep, only boneless, skinless good enough for our princess. I'll reserve that water, after skimming off fat and straining through a sieve, as a base for chicken soup. Of course, nothing makes better stock than boiling the chicken necks, backs and butts! 😀

    Chicken soup is one thing the MIL will eat with minimal fuss. And, I can make it low salt for her, sprinkle parmesan on for the wife, Tabasco for me - everyone's happy. With rice or noodles added, it's filling. And, you can make a ton, for several meals plus lunches during the week.

    I've been on a chicken soup kick. Made another batch for dinner last night. Of late Kroger has been running some great specials on chicken, especially if you don't mind doing a little butchering yourself. Have a whole chicken thawing in the fridge. I'll have to try your way Jdubbya, and roast it, then make stock.

    I know it's nothing like some I've eaten closers to you. It was meh I am a suckered for the salsa though. Better than the meal.

    I think I only went there for the chips haha.

    Speaking of south of the border specialities...

    Tonight was rice and beans. Plain white rice. Black beans; from a can. Sweated half of a Texas sweet onion. Add herbs and spices. I used salt, pepper, cumin, chili powder, cilantro and garlic powder.

    Grate some cheese on top. Had nothing Latino, so I used white cheddar. Sprinkled a little more cilantro on top. Finish off with sriracha. Cholula or Tapatio woulda been more authentic, but went with what I had.

    It was pretty tasty and once the rice was cooked, about 10 mins to put together. Wish I had planned better, though; would have run to a local supermarket and gotten some over-ripe plantains. 😋 That would have been the icing on the cake!

    Yeah, I always fill up on the complimentary chips and salsa. Rookie mistake, but there's not much that goes better with an ice cold cerveza when it's scorching out...T

    All this chicken noodle soup talk was perfect as last night I had some Jason's deli. Not a bad meal and we don't have these in Canada.

    The soup was great but nothing like the home made.

    So worth it. I wouldn't be surprised if this week I go back for dinner and fill up on chips. Bring the food home for dinner the next day :D

    Prime rib burgers again....

    I lived off and on in Phoenix. Have had very good Mexican there. Surprisingly, areas of Washington State have excellent restaurants too. A small farming town of 31k people is 30% Hispanic now, so they have a couple good restaurants. Here in Canada I have one restaurant and its horrible.

    I thought Vancouver,with its size, would have some experience good spots. But on that note I never got that "amazing" Mexican in Toronto either. Nothing like some of the Mexican I've had in the business trips.

    Same goes for BBQ....had some nice grilled food in Toronto but nothing like Charleston, Delaware etc...

    It works pretty well both ways I think. I did keep the necks and giblets raw and tossed them in the pot before the cooked carcasses. Lots of carrots, a little onion and celery, and I put the big fat frozen egg noodles in mine. I really like them in soup for some reason.

    Vancouver is kind of weird the only ethnic group that is excellent is pretty much all Asian cuisine. The rest, some good gems but its mostly mediocre from what you'd find elsewhere. Like my town has a huge South Asian population. We have a few stores that specialize in goods from India. But only a handful of Indian restaurants and non are very good. Even the South Asians don't eat at them!

    Wholefoods sells the best fresh pasta. The Costco stuff is ok but I think they put stuff in them for shelf life.
