    After pork chops and filet mignon, culinary penance. Had cod tonight. Pan cooked with a little EVOO. With green beans and corn on the cob. The highlight was the sauce: wasabi, yellow miso, apple cider vinegar, pickled ginger, a little agave syrup. Blitz with a stick blender. Drizzle over top. Turned out pretty good for an improvised sauce...T

    Hit the all you can eat sushi place. Not the greatest but not the worst either. Above grocery store, maybe average restaurant quality. Its made to order, so not buffet style and hence its not a bad option. We have so many Japanese restaurants here its the only way to compete, unless they go high end.

    Cioppino. AKA Italian fish stew. Sweat onions, celery and carrots with as much garlic as you can stand. Black pepper and paprika as well. Cover with water. Dunk in your seafood: I had shrimp and cod, the latter left over from dinner last night, plus anchovy paste. Half can of tomato sauce, small can of tomato paste. I threw in chopped up spaghetti that was cooked and hanging out in the freezer. Simmer for a few hours. Yummy with a bit of hot sauce.

    Serving it with my "cheaters" garlic bread. Slice up a loaf of Italian bread. Toast lightly. Butter it, but lightly, because it's going back in the toaster. Sprinkle garlic powder on buttered bread. Put back in toaster, and toast until it's golden brown.

    Nicely played. Now I want Chinese.

    We had NY steaks, baked potatoes, salad, and corn on the cob. Was pretty good except for picking bits of foil out of the potato because my sister, good bless her pea pickin heart, decided to poke a fork into the potatoes after she wrapped them in foil. :)

    Nice. We did Joe Fortes for chops and some clams. Pretty good.

    I can't get cable TV. City water or sewer. I'm surprised my house has gas. Really nice to not worry about tanks and running out.

    I picked up two pounds of USDA Prime Ribeyes from Costco to grill for Father's Day. My wife and I agreed that while the meat was clearly superior quality to the Select and Choice cuts we buy locally, we were disappointed that it didn't have a lot of marbling. As such, they were tremendously tender, but lacked the juicy flavor of the cheaper, fattier cuts we're accustomed to.

    I sometimes buy from Costco. Mostly is Safeway rancher select or whatever they call their meats. The butcher up the street is good but its all cut before putting out and they don't do custom orders. Another shop does custom cutting. I like fat so have them leave a good amount on. I think it adds flavor when cooking.

    Fat = flavor. Maybe they were too well trimmed?

    I've never had a bad steak from Costco that I can recall. It's not as good as butcher shop dry aged beef, but it's never been disappointing. I'd bring it up with the manager.

    Also, maybe try NY strips next time, they can be more flavorful than rib eyes, especially if they're bone in.

    BTW, charcoal or gas?

    Tom, I always use charcoal. Also, I was set on getting the Ribeye cap again but all they had were the sirloin cap steaks so I passed. I believe you're spot on that they were trimmed too lean. Lesson learned!

    Any good old fashioned butchers in your bit of Mississippi?

    Depending on how close you are to New Orleans, Cleaver & Co. is a good butcher shop. Not sure they dry age their beef though.

    Did a good deed. Took my Dad out for dinner again. My mother wasn't feeling well and he didn't want to cook. But by the time we got out it was almost 9pm. For some reason Japanese restaurants and some Greek/Italian restaurants close Mondays. Limited options. The bistro place was busy. Ended up at Denny's. Never again! Horrible.

    I found out the farmer up the street who sells their meat direct uses this butcher to do everything Ham, Abbotsford | Meat Products| Rempel Meats Its really close to my house, so I'm going to check them out.

    This is my second go to here Davis Quality Meats. Value Packs. I like the packs because they'll custom cut and mix and match stuff. I can get a ton of hamburger for the dog this way.

    The third is for chicken mainly because I feed my dog mostly raw whole chickens and they have good bulk deals. http://themadbutcherbc.com/ Products - http://themadbutcherbc.com/ They do have ok steaks.

    Well that's about classic 'merican lookin Mexican food. I am now torn between Chinese or Mexican. Maybe I'll cook some Italian tomorrow and screw things up or balance them out somehow. :)

    Oh... and apparently HAPPY BIRTHDAY Tamas!!!

    Unfortunately, no good butchers nearby. But thanks for the recommendation as I'll check out Cleaver the next time we're in N.O.

    Prosciutto? Not, pancetta? Either way, that looks great. Lunch today is fruit - mango (at their peak), peach (nearing peak), and an apple (meh).

    Tonight I'm gonna make smashed burgers a la Jdubbya! :) Smoke alarm be damned!

    Wife has been wanting to try the Eggs Benedict recipe where the hollandaise sauce is made from yellow pepper, cream cheese, lemon juice and spices. While it wasn't exactly like good ole hollandaise sauce, it was very similar and turned out great.
