    Smash burgers!

    One pound of grass fed ground beef. Make 6 very flat burgers. Put on a hot skillet. Put a pot on top to keep weight on it. One minute. Flip. Press pot back on top. One minute. Slap in a toasted bun with fresh sliced tomato. Enjoy.

    It was. I have Jdubbya to thank for the inspiration on smashing them. It was grass fed, so I wanted to minimize the add ons. Just a little salt and fresh cracked pepper after they were cooked for the wife and a little hot sauce for me...T

    Yep, yellow bell pepper. You get just the faintest pepper taste but pretty good otherwise.

    Everyone's entrees look great! The eggs lbenedict looks awesome Face 76.

    This was last night's but we had some tonight also. Bison arm roast done in the crock pot with onions and mushrooms, a mix of potatoes, green beans, and the gravy started with a hard cider/orange juice/maple base. I missed my target to set it on low before the roast went past 150°, but it still turned out moist and tender, and shred nicely.

    My mom was still sick today. Brother and SIL over from the Island grocery shopping. So decided we'd take my Dad out and all go for Chinese. We stayed in our area, so more Americanized Chinese place VS Richmond and more traditional. Younger brother called and ended up joining. He's not adventurous, so we just did the stock dinner for 6 deal.

    We had burgers last night also. I'm a fan of the USDA organic hamburger meat from Costco. My wife cooked them on the stove and I added my special recipe sauce (minced garlic, onion, ketchup, Worcestershire, Tabasco, pinch of sugar). I'll take them over any restaurant burger!

    Close to meatloaf without the binders/fillers like egg and breadcrumbs. Try the smash technique next time. They get a great crust. And, remain uniform in thickness.


    My mother in law uses ketchup on everything. Even on steak. It makes me cry. 😢😢 I think at her age, her taste buds are gone, except the sugar receptors...T

    I'm not a big fan of ketchup. On fries, onion rings and hot dogs. On other stuff like eggs, etc. Nope. With fries if I go gravy, no ketchup.

    It's too sweet for me. Of course, asking for gravy in U.S. restaurants will likely get odd looks, unless you're close to the Canadian border...T

    Tonight was homemade vegetable beef soup. Basically, trying to clean out the fridge. Had some small brisket ends. Boiled those up in a few quarts of water, skimmed off any fat that floated to surface. Sweated a mirepoix. Leftover corn off the cob. Leftover rice, tomatoes. Usual spices. Simmer. Serve with garlic bread...T

    Yeah, think I mentioned Americans find it weird unless its along the border or Southern California. Lots of ex-pat Canadians in LA. Plus most restaurants that serve fries automatically ask if you want gravy here. Vancouver is a major filming center, so tons of American actors have picked up the habit. Having lived in Phoenix and Lake Tahoe, these places they look at you weird. One of the last Tonight Shows with Jay Leno had David Duchovny on. They talked about X-Files being filmed in Vancouver. Leno said Van was his favorite road trip, he performs at casinos here and he always gets fries and gravy. Another is Dennis Miller who's wife is Canadian. Side note my parents know Millers wife, her father Don Espley was their go to guy for real estate. My parents have gone out for dinner with them.

    I LOVE gravy on fries. :D Oddly, though, some servers do look at me sideways when I order it. Sometimes I ask them what they think about people who have gravy on mashies and they get it.

    For awhile one of the ketchup brands was making a tabasco ketchup but I haven't seen it in a long while. I generally add either sambal, frank's red-hot, or tabasco. Although I did buy a bottle of tapatio the other day too. :)

    I cut to the chase and just go with the Tabasco and forego the ketchup! Never tried Tapatio. I'm a fan of Tabasco, and tried most of their non-hot sauce items. The sriracha is great. The rest, not so much. Have not tried the ketchup though...T

    Should have thought about it earlier. With the family meal deal at KFC it comes with gravy. Everyone here thinks its for the fries. I think its actually for the chicken.
