    I wonder if this would work in my Big Chief smoker? I might have to try it although from what I've read they never really get warm enough to fully cook meat like a big smoker like yours or one of the side pot grills. I've never really done much besides smoked fish and jerky in it.

    Chicken is awesome in a smoker. Turkey too. Especially if you go to the trouble to brine, inject, rub, etc. But, good if you just chuck a whole chicken in. Skin gets rubbery, but you can fix with a final quick grilling to crisp up skin.

    If your Big Chief is like one on Amazon, it says it gets up to 165 F, which would be too close (for me) to usual doneness temps for chicken. I use a Weber bullet smoker...T

    The high end meats seem to be online with Costco. Plan was to get the four for the weekend. My older brother only eats Chinese dishes at home. So when he's over on weekends I try to buy him our staple treats. I have the Executive corporate membership deal. So they send me coupons and other special offers all the time. My family and a few family friends have their cards on my account. The more they shop, the more offers I get.

    Smashed some Bison burgers then cut this up added some kale and made a wrap with a rice tortilla. (...also showing a great cast iron skillet cleaner I discovered)

    Yumbo. Are the sliced things along the bottom potatoes?

    I always wondered whether those chain mail cleaners work. I like the polycarbonate scrapers from Lodge. The PITA of cast iron is the best time to clean it is when it's hot, right after you've finished cooking. Which is, of course, precisely when you want to get your grub on!

    That's what I figured. At the best steakhouse here a 20oz is about $75. So four would be $300 plus drinks. We'd also need to feed my SIL, she doesn't like our steaks or red meats at all. So plan was make them here and get her Chinese take out. I try to do at least roast beef and potato's of some kind and maybe even some Mac N Cheese. Treat for my brother when he is over. Otherwise he only eats North American foods Christmas and Thanksgiving.

    Bought some tortillas at Costco and some frozen tuna steaks. Later in the week I'll make beef soft tacos. Tonight grilling a tuna. Mix a little salsa and mayo. Toss in the tuna. Grate some cheddar. Roll it up. Pop in microwave to melt the cheese. Then toss in a frying pan and some olive oil. Lightly golden and it should be a great wrap. My own invention.

    Well if you are goin big you might as well go REAL BIG and grab the Wagyu... D?Artagnan Japanese Wagyu Boneless Ribeye Roast A-5 Grade

    It's only $136/pound :eek: but does look tasty. One of these days I'm going to make it over to John Howie in Seattle and eat or at least get some really top shelf steaks to go. They have some amazing looking dry aged beef that is supposed to be really great!! But their prices are just a tad steeper than Coscto....     Stop it! Dang you. I'm not sure it's right to lust after a piece of meat, but I do with that D'Artagnan A5 Kobe. I'd have to go whole hog though and put some foie grass and white truffles on it. Just sign me up for a quad bypass!

    $17.5/oz is a lot for Wagyu. Especially if you can get A5 Kobe for half that. Anything special about John Howie other than it's local? Not that having a local is a sport plus in a butcher.

    I have a family friend in Bellevue. We usually do dinner at his house. His wife is an amazing cook. Retired upscale caterer. But I'll take them there next visit.

    Slowly whipping all my bbq gear back into shape after much neglect. Tonight it was chicken leg quarters on the Big Green Egg. 69 cents/lb at Kroger. Captain cheapskate says you can't pass up a deal that good! :)

    Prepped simply. Garlic powder. Salt. Pepper. Paprika. Chili powder.

    I use the BGE plate setter to deflect the direct heat, and allow quarters to cook slowly, but not low & slow like you would in a smoker. Ca. 300-400 F temps. About an hour or so until thigh reads 165 F.

    Served with leftover rice, and mushrooms. Plus, a quite good chardonnay from Kirkland/Costco.

    Good deal on the chicken. Its mostly expensive in Canada. Forget the price because I have not bought here in years. Problem due to bird flu, you couldn't bring it into Canada from the U.S. until a few weeks ago.

    Phone scammers are getting annoying. They don't know how our tax system works and how they fine you.

    Hmm. Wonder if that's the reason it's been so cheap in US? Inability to export.

    My mother in law gets IRS calls all the time. She has been retired for 35 years! Seems to be a new thing?

    Tonight, fingers crossed, steaks on the grill if the wife gets home from her meeting in time. Rereading my Weber cookbook. I'm channeling perfect cross hatch marks.

    That jibes with what I recall from the last time I was in Vegas, Japanese A5 was $30 or so per oz at Gordon Ramsey's place at Paris. Costco Kobe is a great deal. My dilemma is (a) my wife and I couldn't eat it all in one sitting, (b) I'd hate to freeze/thaw something that gorgeous too many times, and (c) & I'm not sure I'd want to share with anyone else (our best friends are pescatarians)! 😀

    My holy trinity of grilling. My trusty Weber 18" kettle, my Lodge cooking gloves, and my Weber chimney starter.

    This is what those gloves looked like when I bought them at the Lodge factor store in Tennessee many moons ago.

    And, finally, cross hatches! Not my best ever, but I'm rusty. Steak was tasty. Bone in rib eye. Missus gets the eye, I get the cap & gnaw on the bone.

    Served with candied carrots, rice medley with a smidgen of parmesan cheese, and fresh sweet corn (it's at its peak!).

    Later, peach pie from Kroger. 😋 Usually 8 beans, on sale for 5 bucks. 10% senior discount (thank you mom in law!) + $1.25 coupon. Out the door price, 3 bucks and a quarter. Captain cheapskate approves!

    Those are raw mushrooms this time.

    I love the efficiency of the small webers and the chimney starter. The jumbo joe you saw of mine in an older post is from about twenty years back. I have a char-broil or charm-glow H2O smoker I should get down, what with you folks all talking smoked goods.

    Thinking I may try to do the bison flanks into jerkey on it. Another thought was to whip up a quick solar dryer/oven. I've always want to dry some Jerky by the sun like I'd watched done on a reservation (or maybe it was just a temproary encampment) during an anniversary pageant of the signing of the Medicine Lodge Peace Treaty when I was a boy.


    Having a big juice tonight. No pics, sorry - it's in a stainless bottle. Extracted it today from apples, apricots, nectarine,oranges, carrots, piece of turmuric, kale, kiwi.

    Safeway in the U.S. had signs up until a few weeks ago. No poultry unless cooked can go across the border. I usually buy it for the dog and then steal some for myself.

    The Rev Can phonies say you owe money and unless you pay now they'll come and arrest you. They identify themselves as officer such and such. Criminal tax deals are handled by the RCMP. Rev Can sends letters if you owe them or have other problems. The only time they call you is if you contacted them first. They only return calls and emails. My cousin works for Rev Can and gets worried calls people thinking the police are coming to get them.

    Sounds similar to the scam calls my MIL gets. She's 99, if they wanna chuck her in jail, be my guest! 😉 They'll ship her back ASAP once they realize how high maintenance the old gal is. 😀

    I hit Costco today. Was about ready to shoot somebody by the time I got home. The little town where my closest Costco is seems to be in the middle of paving every road in or out. That and how rude people are when shopping.

    BUT.... they had Prime prime cap steaks. So I grabbed a couple. How do you generally cook these things Tom?

    They also had some decent looking wild Sockeye salmon not the usual farm raised crap I see. And only $8.99/lb. For the salmon that is. ;) Oooh, oooh oooh, and they had one of my all time favorite seafoods that are rarely available...razor clams. Oh man if you've never had pan fried razor clams you haven't tasted the best clam ever.

    And in keeping with the theme of the thread I grabbed the old standby roast chicken croissanwich and salad for lunch and had the rest for dinner tonight. :)

    Its a big problem. Tech makes them seem legit. It must be working or they wouldn't do it. Unless you are all out evading taxes, they won't go after you criminally. My cousin said they should advertise nationally on what CRA does if you owe them money and received multiple letters demanding payment. CRA just seizes bank and stock accounts. If not enough money in the accounts. They can tap credit cards and lines of credit to get what's owed. So no need to send police if you owe money or even jail you until paid.
