    It was especially difficult for me to leave it in since I prefer beef to be much more rare than my wife does. She'd have me butterfly a 2" prime filet. :eek:

    Swine burger from Yardbird. Best burger I've ever eaten.
    So good.
    Short rib, brisket and chuck patties, American cheese and spicy mayo topped with a couple slabs of pork belly. Fries with bacon salt.

    Holy smokes, that's pink.

    My wife would flip out. Darth's wife too, if I had to guess. 😬

    Getting my wife to accept medium rare steak was a chore. No dice on ground beef, which is why I've gone the smash burger route. Keeps her happy. And, with a slice of American cheese in between has good moisture.

    One of these days, I'd like to grind my own, then with that level of quality control, I'd be more comfortable going to a medium / medium rare on burgers...T

    Thanks Tom. It was pretty good. Have some tweaking to do, but that's what cooking is all about.

    -Ground beef
    -Panko Bread Crumbs
    -2 Whole Eggs (Beaten)
    -Mexican Style Cheese (in the bag)
    -1 large jalapeno (half de-seeded, half seeds)
    -1/4 white onion
    -Taco Seasoning
    -Taco Sauce
    -Cilantro

    Bake at 350 for 1hr and check internal temp to make sure it's cooked through.

    Smashed turkey burgers. Cast iron griddle over a pecan wood fire. Topped with a homemade apple/chipotle relish.

    Apple /chipotle relish. Applesauce, 6 chipotle peppers, couple tsp adobo sauce, sprinkle of cinnamon. Reduce. Not too crazy spicy. Would likely also go good with pork and chicken.

    Lemon juice on the bird then rubbed with Cavender's, lemon pepper, oregano, garlic and rosemary salt and with lemon wedges and onion inside the cavity.

    Do you mean the one-time Chicken Delight restaurant chain? I applied for a job at a Chicken Delight when I was in high school. They wanted me to put on a chicken costume and hand out lunch coupons to passers by! 😀 Fortunately, I got a job cleaning bathrooms at a Woolworths in Brooklyn to save me from the ignominy of dressing up as oversized poultry! 😂
