I didn't sou vide these but simply throw them skin side down in the pre-heated skillet then cover and cook for 20 minutes. No added fat, no nothing, just throw them in the pan, cover and don't touch 'em. I swear it is the best crispy chicken skin that I've ever had. Jacques then made a pan sauce with mushrooms and white wine but I didn't do that this time. I'm not sure you would get the skin that crispy in a short sear in the pan. But would be worth a try!!!
I do that in my soup pot. pull em out, cut em up and then put them in the veggies that i used to deglaze. add chicken stock, simmer. great chicken soup!
Hmm. Interesting. That is opposite order to how I do my chicken soup. I'll have to try that the next time I have some thighs ...T

Well I'm not sure about tonight's dinner. Have weird swelling of the left eye lid. So off to doctor clinic. (faster VS emergency) and see what is up. Probably an infection or tear duct blocked. Doesn't hurt so no worries. But never know could be surgical.
Side tip for the tear duct thing... Rinse your eye with Johnson & Johnson baby soap. Its strong enough to break down the oils clogging the pore but won't make you blind. Works for me every time I feel one coming on!
Thanks for the tip. Spent most of the afternoon today at the walk in clinic. Bug bite allergic reaction. My brother had similar but his turned out to be a detached retina with an eye infection deal or something. Craving donuts. So going up to Tim Horton's. Sandwich, chilli bowl and donut.
Still too hot to do much cooking. Last night was bagels, cream cheese & smoked salmon. Tonight, it's going to be grilled tuna salad sammies...T
Yum smoked salmon with cream cheese is a great combo. My favorite Japanese restaurant has a Philadelphia roll with cream cheese and smoked salmon. My second favorite sushi roll.

Two more yummy deals. I bought a deep fryer for those Costco Mozza sticks. The problem with loving sashimi, the only way I can eat cooked fish now is in sandwich form for some reason. I'm not a fan of canned fish, unless it was canned at home. So I'll buy the bags of frozen salmon or tuna steaks at Costco. Grill them and make salad sandwiches out of them.
I've become the same way. I never use canned anymore. It's super easy to grill them up, chill in fridge for about 10 mins, and then flake, and mix into a salad. I do the same with Costco salmon, and trout (if you smoke it, excellent!)...T
In the same bag? I'm developing a new weight loss program. I call it - cooking pizzas outside when it's 100+ F. 😓 😓 Wife invited her gal pals over. I was nominated chef. No biggie. I had 24 hour notice. Made dough last night; also sauteed mushrooms, bell peppers and onions. Whipped up tomato sauce. So, all I needed to do was to throw the pizzas together when the ladies arrived and stay out of the way when the hens started clucking. 😀 Two mins per side to par bake the dough. Then tomato sauce, mozz, garlic powder, oregano. Made one mushroom, one anchovy, one onion & pepper. Ladies happy. Leftovers for me! T
I'll have to try the trout. Done the Talipa or whatever its called. Its a white fish meat. It was pretty good. Now have a craving for a shrimp and grab salad sandwich.
