    Thanks T. The first time I tried to make them I put the salmon in a food processor. Ended up ordering pizza, it was a ****ing disaster. The wine is one of my favorites also. Haven't had one in a while

    Was it to finely processed like a paté? I think salmon needs a bit of chunk to it, if you're gonna make burgers or such. Smoked trout, on the other hand, makes a great paté. At any rate, you seem to have hit on the right method.

    Costco usually had good prices on Pape...T

    I was going to say the same thing. I love smoked prime rib. I'll have to search around here and find pics I posted of one I did a while ago. It's such a great way to prepare prime rib.

    Wife and I shared a prime, tomahawk chop from Costco. Served it with mac and cheese from Cracker Barrel, the MIL's most favorite place on the planet. Steak was 4.5 min per side. Came out ideal. A bit closer to medium on the edges for the wife, and close to rare /medium rare in the center for me. I'm stuffed.

    Costco has some awesome steaks. The top sirloins I got from there last week were perfect.

    I agree, and their prices are hard to beat. We have a freezer full of beef, but I've seen the top sirloin, and have wondered about them...T

    Sliced - it turned out Medium - not ruined but I usually achieve a good medium rare in the middle - chalk it up to a new smoker and timing etc..

    To be honest, there was some left over. This weekend this particular family spent the weekend with us at our lake home. My firiend woke at 4:00 in the morning thinking about the leftovers, got up and polished the rest off and went back to bed. He and I are huge eaters. Only difference is I have to work out like a madman to not be obese.
