    I was afraid of that, at Southside...once you see "multiple locations", there are unavoidable changes in the quality.

    Well, Peters BBQ, "Church" BBQ, and Burns remains to be seen!

    Schedule an "East/North" repeat tour, as soon as you recover!

    Or, just put the HLSR on your calendar, where over 400 teams, cook (and drink heavily) for four days!!

    I have a friend that goes all nights, and her husband gladly says:
    "Call Alan, and have fun!"

    You got it, the bread offered is best used like a tortilla, to make a single slice "wrap" with the meat and the pickles, onion, whatever!
    I am not a huge fan of pickles, so the onions across Texas can vary, almost as much as the sauce!

    Franklin - you were about 2-1/2 hours late to get in line. Really! That's why I'd prefer to order ahead with friends when they do their 5lb min + sides. You pick it up, but it is a specified date in the future. That doesn't work with your plans or people visiting too well.

    I was a little tied up or else I'd introduce you to a few other finds while you were in the area. In Taylor, you probably didn't notice a shop right around the corner - Jeff's Resurrections. Jeff's Resurrections | Fine Motoring Restorations They do some incredible work. Louie Muellers is just incredible.

    Opies - Glad you had the beans. I only go there for the pork chop. It's HUGE and awesome!

    Smittys - did you get your block of cheese too? They don't serve sauce and get offended if you ask for it. But they do have some. That smoke filled room is always like that.

    Southside is fine and your go-to sausage. They sell it at HEB, but always great getting it from the source. I wouldn't go there for much else.

    As others have said, Hard Eight! Hard Eight BBQ Let's put it this way, you can eat the brisket with a spoon, it is so... amazing.

    That's what's interesting. If I got in line at 7am rather than 9:30, I would have had a wait until after 11am, so a much longer wait of 4+ hours. My goal was to minimize time in the line, which was accomplished by going late at 12:30 and spending only about 45 minutes in line. Still had a choice of everything I wanted to try. I don't have enough friends to order 5lbs!

    (I did preorder for La BBQ and it saved me perhaps 30 minutes in line)

    I say you gotta do this in warmer weather in a California or similar spider for the story. I'll be happy to provide tips and experiences :)

    It's funny. When I first came to Texas, 40 years ago next month, BBQ was, well, it was BBQ. I don't think anyone thought they were creating gourmet food, they were just cooking BBQ. The standard was the chopped beef sandwich, plain white bread, chopped brisket with just a little bit of sauce, onions and dill pickles.

    I remember once driving through Llano on my way to West Texas, when I stopped at a hole in the wall place (not Coopers, the place across the street) and got a chopped beef to go. As I was driving along, I kept smelling that damn sandwich so I finally pulled over and ate it. (Sidenote: the historical marker I stopped at was for the home of the guy who invented the Selectric typewriter. Memory is funny.) It was so damn good, I immediately made a U-turn. :)

    Ft Worth - My kid goes to TCU so this is definitely in my wheelhouse. The Woodshed off of University Dr.overlooking the Trinity River is an interesting experience and worth checking out - once. More of an al fresco boutique experience (since it's owned by a local celebrity chef) than traditional "cue" but f you've never had barbecued lamb brisket you're in for a treat, probably the most succulent and juiciest meat I've ever had. It's near TCU and very much on the beaten path so it fills up quickly - you definitely need to go with the pineapple cobbler. Traditional? Riscky's is decent - I'm partial to the one on Camp Bowie - and people swear about Cousins (apparently GWB's caterer of choice) but I have yet to try them. My daughter's sorority has been doing their annual Father-Daughter dinner at Coleman's in the Stockyards for years but I never found it particularly memorable. And there's a new place called Heim's - I haven't been able to deal with the waiting time but it's gotten rave reviews and regularly packs 'em in.

    Is Angelo's still around in Ft. Worth. ? Famous for ribs, but only had them after 3pm.
    Off topic, but what was the burger joint on the west side where you stood at the small counters to eat ? Something with a W ? Help me out Will.

    Digman, yes Angelo's is still around (White Settlement Rd just west of downtown) and where Autobahn BMW, Porsche, VW, Jaguar, Volvo, and Range Rover are located. Angelo's biggest competitor is probably Railhead BBQ (just west of University at the corner of Lovell and Montgomery). I had Angelo's this week and Railhead last week, and they are both still good! If you believe the local hype, Heim BBQ (the new one where folks stand in line and I haven't tried yet) is great BBQ and also has the 'burnt ends.' Heim's is frequently compared to Franklin's in Austin, but don't know about the accuracy of that.

    I think the burger joint you're talking about is probably Kincaid's - started as a grocery store with a grill and you had to move the canned goods on the shelves to get a place to put your burger, drink, fries, deviled egg, etc. The original Kincaid's is still on Camp Bowie plus they've expanded to South Hulen and Burleson.

    I've been in FW since the 60's, but don't remember a burger joint on the west side that started with a W.

    I want to say Kincaid's Hamburgers on Camp Bowie, the original location. It was famous for the best burgers in Texas in the 1970's. The place really hasn't changed much.

    This picture was on the "Entertainment" front page of the Ft. Worth Star-Telegram over the weekend. I hope to try it soon and find out if they live up to their reputation. Their menu is shown on their web page (heimbbq.com), a little pricey, probably because of the trendy area where it's located.

    Just a "bump" for this Tour thread.

    The "Hot Rods and Hatters" (Texas Hatters, who made SRV's brim) is going OFF in Lockhart on Saturday, 8AM until 6PM.

    On the Square.

    So, 200+ cool cars, vendor booths, live retro Rockabilly on stage all day, and of course, some BBQ.

    My friends, The Octanes, will play among others....

    I think last year there WAS a Ferrari there, but...it was parked in front lot of Smitty's, with the "normal" cars!

    I went to the one place in Phoenix that gets raves this week...Little Miss BBQ. I did the pre-order routine after seeing the large "Franklinesque" line...I was shocked that the line was so big at this place. Then I had the que and it was very good. Better sausage than anything I had in Texas. The brisket was very good, I'd put it near the top of what I had on my tour. The pulled pork was "meh". The turkey was ok, but way too salty. The sides were actually fantastic (especially the jalapeño cheesy grits and the "beans" that were more pork than beans - like chili in a way).

    Bottom line we have legit cue here in Phoenix...give it a try if you find yourself near PHX.

    Well, I had the car count WAY wrong!
    More like 1000.....

    I made it inside the door at Black's toward the end of the afternoon. Smitty's was too long.

    I probably could have gotten in for an order, but was worried about getting back to Superbowl ZZ Top show. So, I hit the road, back south, to Luling, The Central Market.
    I made it all the way to the counter, (already OUT of all sausage) and the guy AHEAD of me finished off the brisket! LOL!

    So roaring off east on IH10, with three pounds of hot ribs, wrapped in paper, with onions and bread to wrap it up.

    Blacks might have been the better call.
    :D :D :D

    Ya'll seriously consider combining the Hot Rod & Hatters, with the food.
    That part worked out great.....

    UPDATE 2: Burns in Houston

    I have been very confused searching for this place.

    They apparently shut the original location, and moved to Shepherd Drive for a short time. But I could not find them on Shepherd as of this thread.

    I have confirmed they ARE open, back at the original location.
    So, I am off to check that out.

    There's maybe a few I have not tried...

    There's a Food Truck over on Lockwood, and they are using the name of the defunct place, across the street. They were honest, they were just echoing the name.

    Later I read about the original place, mentioned in Grady Gaines autobiography!
    We have long history in music, and barbeque!

    I did get to explain to some NFL photographers how Gatlin's "worked"...
    They had turned to leave, when the registers closed late in the day....

    "wait, wait! Don't give up!"

    Sure enough, a few minutes later, inventory included four beef ribs.

    "Get one of those, it's as big as yo' head!"

    They passed on that but got fed!

    Turns out NFL had sent a film crew, that morning...Mrs. Gatlin was tired but still very gracious...especially, as my date went on and on about Killen's (Pearland).
    She invited her back and said: "Tell Ronnie we said Hello!"
