I have a project 308 michelotto with a now clean painted chassi and all parts from MAT.FI and now i have a new Ferrari on the way. I cant keep both in the long run, but will i loose much selling this in as is condition for another guy to finish, or should i let the company go all the way and sell it later?

If money is a consideration usually better off completing a car and selling rather than selling a project. Exceptions being recent Aston, 356 and E-type bard finds that have sold for crazy money.

moving the complete finished car is obviously the best way, but if you have to sell it as a project I would list what parts are there in detail and what has been done to date. the Mat builds are fantastic

Sounds like the right decision. Ignoring the financial side it has so much of YOU invested in it from design, build and problem solving that it would be a tragedy for someone else to get all the enjoyment of driving.

Great decision that you're moving forward with the project. I recently acquired an early 308 GTB, Michelotto is very Inspiring !
