Very simple dinner tonight. Just made a tuna melt and a can of New England Clam Chowder. Didn't feel like going out today.

Tonight was soft beef tacos...…… I love melted cheese! Still waiting for the hospital to call and set up another cat scan appointment. Id be in Eastern Washington if I didn't have that.... Have a 94 year old family friend in PA. He sends me chocolates from a place there in New Hope. I think the name is Pierre Chocolates. They are the best chocolates I've ever eaten. Second thing..... I rented and then sold a Mexican family a house in Eastern Washington. Every year the Mother makes tamales and gives me too much to eat on my own. So I'm looking forward to getting back down south! The chocolates will be in my po box there.

Last night Ania made a quinoa "tabbouleh" salad with cilantro, mint, cucumbers, tomatoes, lemon juice, evoo and some cayenne pepper. I seared some ahi with blackened spice, left it plenty rare inside. These two things went together very well imho! Image Unavailable, Please Login
Thanks! And it’s about as easy as it gets. The fish takes about 4 minutes total time for prep (sprinkled a heavy layer of Paul P’s blackened redfish seasoning) and sear and cut. The salad took perhaps 15 minutes to wash and chop all the herbs and veggies (there was red onion too that I omitted above). Cooked the quinoa while we chopped and then put it in the freezer to cook quickly before assembling the salad. Was less than 25 minutes from start to eat. Highly recommend.
Thanks. Tried to get a little less crisp on the crust than my last attempt. Think it could have been a tad crispier but overall I was happy with it...T
I'm going to make pesto linguine. I have a bag of frozen chicken breasts from Costco as well. Might grill one up and have it along with my pesto.
I rarely eat fish, so for me to have it two nights in a row is nearly unprecedented. But last night's seared Ahi and "Tabbouleh" was so good, that the gf talked me into fish again. A bit different tonight; Grilled Swordfish marinated in cilantro, mint, cumin, lemon juice, cayenne and evoo; and more blackened seared Ahi; and some grilled zucchini with some spices on them. I could eat fish every night...….. But these days I like it raw. I still have some left over beef taco, so finishing that off tonight.
A little home cooking. Chicken breast marinated in hot sauce for almost 2 days. Breaded in doritos, breading, cracked pepper,cayenne pepper, all spice, and salt. Drizzled with a mixture of ceasar, chipotle mayo, and sriracha. Paired with Sweet potato fries with parmesan. Sounds like a lot of work for chicken strips but it wasnt bad. Question for the group: I'm being extra lazy this evening and the gf wanted some grilled onions with our porterhouse that is going on the grill. I wanted mushrooms with shallots and bought a pre-made twice-baked potato. So...I threw them all in a large roasting pan and intend to set in the oven at 400F for ~30 minutes. Is this going to work? ^Traveling. so I'm living vicariously through y'all! I'd make a wild a$$ guess that prebaked tater would be done before the shrooms and onions, unless you're OK with the latter being lightly charred like you might do for a fajita. Let us know how it turned out...T
Tom, My friend asked if it was possible so I tried it. It was pretty good and quite the change. The good thing IMO is that the doritos give it quite a crunch compared to general breading. I used the original nacho and used the oven. I feel like a deep fry would work better and I would use Sweet Chili Heat next time. The only problem is the seasoning takes over a fair amount on the taste. With that being set if I made chicken strips regularly I would throw this breading into the mix every 3-4 times for a change.
