Since this is my first winter with my 328, just wondering what everyone else does with their car over the winter. I plan to drive it when the roads are dry and no salt on the roads. The sun doesn't need to be out, just not wet.

Fall/Winter in Florida is the best time to enjoy a vintage Ferrari.

Or new Ferrari. In Tejas. This is January, winter before last. Winter is our reward for putting up with the scorching hot summers.

Just do exactly that: wait until the salt on the roads has been washed out by snow or rain, and then, when the roads are dry, just drive the car: they love to be exercised, for about 60 miles at least. If its is really, really cold (= freezing temperatures during the day) and you are planning some highway driving, be aware that the oil temperature might have difficulty to climb up to normal operating temp (= above 60°c)
And if its cold, this is not a problem in the cockpit; in summer the A/C is usually marginal, but the heating in winter just works wonders.

She stays in the garage on a CTEK float charger waiting for nice days and salt free roads.
I've never taken her out in the snow, but we have been caught in it. It isn't pleasant as she gets skittish on summer performance tires.

Winter in Memphis is like summer in upstate NY. Summer in Memphis is like hot holy hell so winter is actually more pleasant to drive with the top down than summer.

If you can drive it during the winter, that's the best thing for it. I can't so my 328 sits in a garage unattended - as long as 7 months in some cases over the 11 years I have owned it. I put Stabil in the tank, drive the car 20 miles or thereabouts, put it in the garage, disconnect the battery at the quick-disconnect and that's it, no other "preparations." In the spring I connect the battery and hit the starter - car starts as if it had been running yesterday.

I do not like using a charger on an unattended car/battery. By unattended I mean that the car is located in a place that you cannot check on it regularly. As I said, I have had the batt disconnected for as long as 7 months and, upon reconnection, it spins the engine with no trouble at all. Typically, the car is "stored" for 5 months per year.

I drive it when dry ... which is most of the time in California. My garage has no a/c so winter also a good time to work on it. Planning a major this winter; suspension refurbishment and timing belt change. The suspension is dog-tired and identified as the only weakness in the car ... when I bought it 7 (!!!) years ago.
