I read an interview with Enrico Galliera saying 2020 will see three variations of current models but no brand-new models (such as Roma or SF90S)

812 LW strongly suggests no EV component
    That’s a relief

    OK so we've pretty quickly sorted 2020 - how about 4 for 2021 !

    F8 Replacement (Baby Brother)
    812 VS / Lightweight Spider

Seem most likely then (based on other hints here)

    F8 Replacement Spider
Roma Handling Pack (if they can do it for the Portofino......)

    & possibly
    Mid-engine V-12
    Purosangue FUV/SUV

Any more thoughts from anyone ?

Agree with you but I believe the mid engine V12 will be revealed in 2022
Seems more logical with 812 VS and 812 VS spider timing

Where would the roof go in an SF90 spider. The packaging is so tight there is no space whatsoever behind seats?

No doubt there will be multiple reposts but the main element is this:

Camilleri said Ferrari was "certainly" studying a fully electric grand tourer car (GT), but that it would stick to hybrid vehicles for the "current foreseeable future".

"My sense is the electric will come out after 2025. The battery technology is not where it should be yet," he told reporters in embargoed comments made during a lunch on Wednesday in the Centro Stile at Ferrari's Maranello factory.

It should be pointed out that this only echoes his comments in a previous interview in early November:

Mr. Camilleri said the first fully electric Ferrari should arrive between 2025 and 2030, with the precise date depending on the speed of technological advances.

i would love the idea of an AE ferrari.. but all electric car fans are the worst. we car lovers tend to appreciate both of the sides but go to the link and read some comments.. https://electrek.co/2019/12/12/ferrari-go-electric-after-2025-if-still-around/

Did you miss where he said they didn't want to electrify the V12 like they did with LaFerrari?

"To be honest, electrifying a V12 means creating, very probably, a heavy and big car..."

So a lightweight NA V12 is likely what he's talking about.
