    My salads are boring and not picture worthy. Did the Kirkland pesto linguine. I also bought a Rotisserie chicken from Costco, so had some chicken with it. Forgot to get a pic...……….. I didn't have lasagna noodles. I'll brave the stores tomorrow for a box.

    With all this extra time on my hands, and before we are down to canned foods and dried pasta only, I’m gonna post a few pics along the way...

    At the moment, I’m sipping a Bordeaux listening to Ania play the piano, while this 2.5-inch thick, 2.2lb beast of a porterhouse rests in the kitchen...

    Indeed, certainly not cut from our local grocery store! This butcher only sells their porterhouse in 2.2LB size, so its gonna be thick.

    She played very well last night...she played "Quarantine" from First Man particularly well last night.

    Bagpipes..lol...that would be the fastest route to divorce for most couples....hmmm...

    Thank you. It turned out pretty good. If I do it again, I would blanch the taters first, and brown the ground beef separately, before mixing them in with the other stuff...T

    that makes sense, I think I would:

    1. Blanch potatoes till about half cooked
    2. Cook beef with onions, and spices, drain off most of the fat.
    3. Fry the blanched and dried potatoes in the remaining fat in the same pan as the beef was cooked
    4. Add the tomatoes and cilantro, and beef and onion mix, add more spices

    Sound right?

    Yep, that would be a much better plan. I didn't really think it through as much as I should have.
    We were working in the garden, the wife suggested we use the potatoes she made last week.
    So, a bit of Googling, and I launched into it.

    I cut the potatoes into a small dice, and assumed that would do the trick.
    Also, the wife got pretty lean ground beef, so there was not much by way of rendered fat for the potatoes, so they pretty much got boiled in the liquid released by the tomatoes.
    It was good, could have been much better...T
