Nice cross hatch grill marks for tofu! Served it with leftover marinade, top pic, which I had reduced down, over white rice. Next night, smoked spare ribs. Mostly pecan wood. 6 hours, low and slow. Slightly dry-ish due to hitting a internal temp the wife will tolerate in pork, upper 150s, but spares have a lot of fat, so not a tragedy. I also made myself a spicy peach and pequin pepper dipping sauce. [emoji91][emoji91] T

Very easy Tom! The hardest part is prepping it all for the final show. I typically make them using ground beef. Line the plate with a BURRITO size tortilla. Add beef, spicy sauce/salsa, shredded cheese. For crunch you can use tortilla strips, a small hard shell taco, or doritos. I chose Doritos in this one. Lettuce on top and we used a peppercorn ceaser on top. They normally put Mayo but meh. Put a little tortilla on the top. Fold the burrito over it as you kind of see. It will overlap at the corners. Pan fry to your desired tan! You can use small tortilla as well. However you will end up ripping up tortillas to fill the hole at the top. See video for reference.

Kirkland has an olive oil cooking spray. I spray the grill before cooking those Kirkland Angus patties. They like to stick. Tonight was t-bone from butcher shop (stock photo) and corn on the cobb. A buck or so an ear is a lot for corn. Then again, if I could find a decent ear, I would pay that. Our curb has been largely disappointing. May need to look that olive oil spray up. I do a 5 - 10 min pre-burn on the gasser, then wipe down with a damp paper towel. That usually does the trick. Once every couple of cooks, I'll also wipe down with a paper towel dipped in olive oil. Those patties were from a butcher in the small town of Muenster called Fischer's, I think that is how it is spelled. We were taking a drive in the country, saw the place and stopped in. The dog enjoyed a little bit of burger on her kibble! They were good. T
