Pound chicken breast thin, S & P and coat with flour Cook in a dab of butter and olive oil and remove from pan Toss in another dab of butter, 4-6 cloves of minced garlic and 1 minced shallot and some mushrooms Deglaze with marsala and chicken broth & cook to thicken Put chicken back in to finish +/- heavy cream For the green beans: Sweat 1/2 an onion and 4-6 cloves of garlic Toss in a small can of tomato sauce and some white wine, cook for 5 min Toss in and braise the green beans and a pinch of oregano ps 1. I cheated on the diet yesterday, had Chinese food with the family. Tonight I'm getting sashimi with chopped scallop rolls. Its diet friendly.

Last night was the best meal I've had in 120 days exactly...how do I know that for sure? Because it is the first meal I've shared with my wonderful fiance. Sucks that we were forced apart for 120 days...so this could have been mickey d's and it would have been great...as it was, it was a quickly thrown together pasta with chicken, zucchini and penne, tossed with some garlic/chili sauce after 24 hours of travel. Indeed. I've only had to been separated for more than a day or so from the wife once since we've been together, and did that stink! It was 4 months, but with a Xmas visit in the middle, so not too bad. I worry that w/o me though, the missus will never have another balanced meal. Left to her own devices, it'd be cereal for breakfast, lunch and dinner! Great news. T
Thanks Gents...it sucked, not gonna lie. While we have been in a long-distance relationship since 2013, we had never gone more than 5 weeks without seeing each other and we had lived together for 2 years full-time up until Covid border restrictions forced us apart. Glad you got the fiance home....................... My brothers best friend is Cuban. The Cuban friend has been in the US for a few years. Working to bring his family over. The embassy is closed due to rona. So the wife and daughters visa's can't be processed. The daughter turns 21 soon, when she does, she can't come with the mother, she starts the visa process over again. Doing spaghetti and meatballs. Moms sauce and Kirkland meatballs.
Great meal and story. I did long distance before as well and can really feel you on getting "used too" a couple weeks but 1 2 months feels like eternity.
I've been a little static here but just figured I would say hi and keep up the good meals. Some of you might feel the same way but this thread is invaluable to me for recipes and ideas as I learn to cook. For example I made beef tacos tonight due to some posts here. Hopefully my posts have given ideas to others as well. I just got some steak sitting in a little soya sauce and about 5 spices overnight. Excited!!! Keep up the good food and good cooking.
