The bone just fell out when it was done - 8 hours at 225* and then rested for an hour. Wrapped in butcher paper at hour 5 when it was stuck in the stall. Ya, interesting. I haven't had any problems with the farmed caviars...which are pretty prevalent and tasty. What are you buying you like....maybe I'll try some?
I've had caviar go bad in 3 weeks. Best to order right before your ready to eat or at least as quick as you can.
I got some of their Osetra. I think its farmed in Bulgaria. IIRC Plaza has their product in some renowned restaurants. I'm not knowledgeable enough to know if its great or merely acceptable, nor how it compares to other sources. But for $33 an ounce, I picked up 6 ounces.

Got a lasagna from a decent Greek/Italian restaurant. Tonight will be sushi, or sashimi and chopped scallop rolls. Picking my dad up at the airport at 6pm. So I'll have dinner at my favorite Japanese restaurant.

Very nice drive today. Overcast and had a good time. Local small grocery with a butcher so had to get chops. The same home made bbq used on the ribs earlier. Standard 2” thick. Indeed, it was delicious. Despite the fact that i am a big wine and beer fan, i had never tested before the Pilsner Urquel and i have to say that it has a very good flavour.
