You still don’t understand and that’s why you keep making dumb posts. There is NO Michelin star rating system in Australia and I never said I’ve been to a Michelin restaurant here. I have been to many abroad including Hong Kong. Unlike yourself, I have walked through many of these kitchens with the head chef and have experienced the varying types of cooking methods first hand. It’s what my wife and I do when we travel overseas. The vast majority of big hotels around the world is NOT where you will find good restaurants. HK is limited for space so they tend to pop up in hotel chains but by and large, big hotels serve average uninspired food. You should really stop commenting on stuff you have no idea about, but I guess you’re incapable of that
And with regards to dining in Australia, restaurants here get nominated in the Worlds Best 50 list. In recent times, both Attica in Melbourne and Brae in country Victoria made the top 50. I’ve been to both, you?

She just not get it , we would rarely dine in a hotel we are staying in ,we seek out small privately owned ones . I'll do breakfast in a hotel were staying ..perhaps a light meal in a bar like the one at Claridges .But in general we seek out small venues . I’ve been to 1 with 3 stars and 2 with 2 stars between 2009-2010. We plan our holidays around the great restaurants of the world. We had a reservation at Osteria Francesca in Modena last year (with PP and his better half) , which was awarded World No 1 restaurant several times, but the Chinese ****ed up those plans…..

Apparently not. Honestly, as well as relying on some really good cookbooks, I've tried many recipes that I've just found online that have turned out to be fantastic. The key is to not necessarily follow them religiously. Add / takeaway / reduce / increase various things based on your own taste. The only time one should really follow a recipe to the letter IMO is when baking.
Must admit Steve there’s some great stuff on the net…I was going to do a Rogan Josh tonight but things just got too busy running around HKG today..I had to do another Covid Test…So fully vaccinated now ( 15 days after second shot ) and I still have to do a test on day 3 ,7,12,16 and 26…The worlds lost the plot…
