Guanciale (pork jowl) is similar in taste to pancetta but is a bit more rich and porky in flavor given the higher fat content in guanciale vs pancetta. I typically make amatriciana with pancetta as guanciale is not as easy to come by where I live. It’ll be hard going back to making the dish with pancetta lol.

Sports in general over the past year just really pushed me away with all the off the field non-sense. Went from listening to at least 8 hours of sports talk radio everyday for over 10 years to maybe listening 10 minutes a week now. Last year I played without watching, but still had a slight idea of what was going on. Always enjoy the bullshitting throughout the season, but without any knowledge to discuss it's kinda diminished. Maybe I'll get sucked back in at some point, but I didn't even care that the Astro's were in the World Series. That's how little I've cared.

Was going to Five Guys for a bacon cheeseburger, fries and chocolate shake. But the line was out the door and about thirty to forty people standing waiting for their order. Decided to get a calzone at Pizza Pizza instead. I pass two Esso gas stations on the way. Both out of gas. The floods and mudslides are messing with our supply chain. The government is restricting fuel sales to 30 liters per vehicle. They still ran out of gas. That's a lot of cars getting gas. Glad my tank is almost full!

A good sign. Ordered the ultimate fajitas - beef, chicken, shrimp, sausage and also flanken style beef ribs, plus a ton of tortillas & sides. Enough for 3 meals thus far. Tasty too. T
