I have a 1980 308 GTBi and its in white with a red interior. I haven't been able to find any information on how many of the 308 GTBi's were produced in specific colors. If anyone might have some useful information on the topic I would be very grateful.

As said many, many times: that information, backed by a reliable source, is simply not available anywhere. In other words: nobody knows.
Honest people will tell you that they don't know; those who quote figures are unable to name a reputable and reliable source.
That being said, we are not taking a big risk by saying: "not many White with red leather 308 GTBi", probably less than a dozen, probably mostly for Japan.

nerofer is obviously a great source of info, and as he mentions, official numbers don’t seem to exist.
I own #48771, ‘83 US spec GTS QV, which is white on red. I’ve seen a couple other white 308s online, never in person. And of those, I think all but a couple were white on black, one white on tan, and probably 2 white on red. So, as nerofer points out, we have an uncommon combination. I think it tends to get more attention because it’s not red.

Rare combo and nice color combo— unlike some rare colors that are rare for a reason!

I've never seen a white 308GTB in person and I pay attention; my 328GTS is white and I've owned it for 20 years.

I saw a white 308 GTS in Newport Beach once , in 1985, some 20-22 YO looking kid had it in for service at Newport Imports.. Don't remember if it was an i or QV. Never saw another white 308 or 328.

I have a white 1987 328GTB. Drove down to Monterey and exhibited in the Concorso Italiano in 2016. Stood out in a sea of RED 328's. May have been the only GTB there. Certainly the only white car. My license on the car has been NOT RED since I bought it.

We had a white 328 GTS here in the southeast back in the early 90's. I think it was owned by someone Mississippi.

I have video of it at a track meet here in 92.

In the USA, it very well could be; after all, there were only 494 GTBi made (versus 1743 GTSi), and the US did not receive many GTBs (again: in Europe, GTBs are not rare, let's say about one GTB for two GTSs, whereas it is usually much less for the US).
White over Red leather is usually "somewhat" popular in Japan - these are their national colors, remember; and in Switzerland also (national colors, but reversed).
Well, a rare combo, for sure; all over the world, I would say five or six; certainly less than ten.
    This is only GUESSWORK...

My Red/Tan 308 GTSi was originally White/Tan. I'm considering changing it back.
