My mom used to make the best flank steak, marinated for 24 hours in red wine, wochestishire, teriyaki and garlic. Amazing stuff, would be so tender and juicy! Thanks for sharing
I'm thinking about getting some coconut shrimp for the air fryer and make a Caesar salad. Trying to stay with diet friendly dinners.
So far, reheating food that is already cooked, and putting a nice crisp on it has been the killer app for our air fryer - carnitas, brisket, tater tots, zucchini fries, etc. After 2+ weeks on the road, we booked a Residence Inn with a kitchenette. Went to a great little place we found in Bend for fish. https://sebastiansseafoodbend.com Picked up some King Salmon from Newport, Oregon. Took a while, but we sussed out how to operate the grill @ the hotel. Image Unavailable, Please Login Image Unavailable, Please Login Very fresh. Tasted great. The air fryer is great at reheating fried dishes from our Chinese take out. Its also great with premade foods like the coconut shrimp.
Everyone is eating good!!! Today’s my daughter’s 5 year old birthday and I asked what she wanted to eat for dinner. Of all things she requested arroz caldo which is a Filipino chicken porridge. Image Unavailable, Please Login Image Unavailable, Please Login
The wife made Indian skewers with marinated chicken and then one with marinated paneer and onion, some bell peppers and mushrooms in there too. She made garlic naan on the grill too. Oh, she also made a rhubarb chutney. All yummy! Image Unavailable, Please Login Image Unavailable, Please Login Image Unavailable, Please Login
Future foodie in the making. LOL. We were on a cruise ship once that had chicken congee - somewhat similar, less spicy - for breakfast. It was great. With a bit of chili garlic sauce to kick it up...T
Will do. Our return route is not fully clear, but I need to be in Newport, RI about 5 days after we dock in Seattle. So, we will need to jet! I could have planned this road trip better. LOL. But we could not pass up the Alaska cruise. Image Unavailable, Please Login T
Man, that brings back memories. Your mom's recipe sounds pretty much what my mom called London Broil. She didn't use flank steak, but top round near as I can recall. We didn't eat meat much as kids, so London Broil was always a special treat. Especially with mashed taters! Yummy...T
Another "home" cooked meal on the road. Went back to Sebastians in Bend. Found a steak that looked pretty tasty. It was a ribeye from a co. called Aspen Ridge Farms. Ciao...T
I just bought a box of pub style chicken strips. Plan to air fry them and add the strips to my Caesar salad.
If you take the southern route going through Rapid City PM me. We stopped the route thru Wisconsin a few years ago - bad roads and lower speed limit (I see they’re up to 70 now). Don’t remember good or bad for Minnesota. Never driven across ND. Wyoming, SD, and Iowa are really nice to drive across. The worst part is Chicago - what a mess.
We marinate it for about a day also. Coleman’s Mustard, soy, pepper, and ginger (roasted if you can find it). Comes out great every time.

I'm not sure yet. My dad and brother are coming back from the states today. They'll be passing a Chick-Fil-A and I want to try them. It would be 45 minutes old by the time it gets too me. But I might get them to bring some back.
I will indeed! In the past, we have found it worth going an hour or so out of our way to avoid NYC, Chi-town, etc. on such road trips. The reduced aggravation more than making up for the increased drive times. T
