A tad soupier than I wanted. Next time a tad less vinegar. I also added a clove of garlic to give it a bit more aroma and bite. https://www.seriouseats.com/sambal-oelek-recipe Used Fresno chilies. Muy picante. So, I put in a Mediterraneo pepper to cut the heat. Then after sitting overnight, maybe the vinegar cut the heat from the capsaicin?!? So, I mixed in a Thai chili. yes...had some corn that needed to get used and was a bit tired of grilled with truffle salt because we do that a lot in the summer. We also have a chunk of Cotija cheese that is not getting used up. And my wife has guacamole fixings laying around. So the idea occurred to me. Its super easy. I boiled the corn because I was too lazy to go outside and grill just that. Sliced off the cobb, toss in a bowl with: Lime Juice Ancho chili powder Salt Black pepper Sour cream Grated cotija cheese Diced red onion Diced cilantro We have made it before, and I used Mayo those times. Frankly, I preferred my prior efforts. In part that's because mayo rather than sour cream seems to work better (mexican crema would have been okay too), but also because (brace yourselves) there is such a thing as "too much cheese". I know, who knew? I put too much cotija because I'm on a mission to finish that hunk up (ideas welcome).
Soup Making Photo Story (apologies in advance)... Made our first-ever attempt a Tomato Soup. (we are having a bit of an early rainy/cold fall today and we have a giant box of tomatoes that we got from a farmer last week that have got to be used up...) Used about 10 tomatoes, half an onion, two cloves of garlic, a giant bushel of fresh herbs from the garden (basil, thyme, oregano), and some salt and black pepper. That's it for ingredients - no water, no stock, no cream. Boiled it for an hour, then subjected it to the immersion blender, then simmered down by half. (the change in flavor was remarkable between pre- and post- cooking down by half. The concentration transformed the soup from "meh" to "wow". To go with it, my wife baked some sort of "garlic herb" bread roulade she found online - it was absurdly yummy. Gotta say, this is unquestionably the best tomato soup I've ever had. And sorta a no-brainer to make. Good ingredients - fresh tomatoes and herbs - tell the tale. Had a get together at the house. Appetizers below. Also served Kalbi (Korean marinated short ribs) and gochuhang-marinated pork belly from the grill. No photos of those though. Why? Because when I came in from the grill, all of it was gone!!!! Items from our garden included: fresh basil, rosemary, Korean peppers, jalapeno, Korean sesame leaves (perilla), Vietnamese purple perilla, scallions, red peppers.
