Sautéed bok choy, eggplant (diced) and green onions (they were in the fridge and not getting any fresher) for a couple minutes. Added peanut mix to the broth, simmered until thickened. Man, that looks rich and delicious! Nice sides too. For taste to price ratio, Australian lamb from Costco is hard to beat. I like to take their lamb racks, marinate in lemon/EVOO, S&P, rosemary, garlic powder, and sear the whole rack on the grill. Then, cut them into 2-bone chops, and then finish off to desired (wife - medium, me - medium rare) doneness...T

I never use the packets, not that they're not good, just prefer from scratch. If its any consolation Kare-Kare is one of those dishes that's hard to get right every time, you'll have to tweak each time you cook. I put the oxtails in the pressure cooker to tenderize.
The recipes I read seemed to have a lot of moving parts, so I went w/ a packet to make it easier on myself. Definitely needed more peanut flavor. The veggies with the peanut-y/beefy broth was the best part of the dish. Veg was done just right. I could see a lot of other options. Just gotta get more tender oxtails, and since I don't have a pressure cooker, that means trading t (time) for P (pressure). Thanks for the inspiration...T
