You may want to correct the suffix which is EU (ECK-OH, YOU-NEE-FORM) not GT (GOLF, TANG-GO) for 0341.

In what colour did 0373 participate in the 1956 Liege-Rome-Liege event? Grey or red?

I never saw a color picture of it but it must be grey . Even it can't be seing as the 100% correct color, BBR gives for his 1/43 scale Fiat Grey 634 X 10 (1592) not sure if this is correct for the real color that 0373GT was at the LRL .

You must have the paperwork for the work done by Garage Francorchamps to prepare the car for the Liège-Rome-Liège is there any color on those papers?

Now that's a party trick i need to learn :D I'm new to this scene, didn't know you could figure out the colours of cars in grayscale images if you got Mr. Massini kind of knowledge.

I even have the original factory invoice, plus the original certificate of origin and several other invoices but there is ZERO mentioning of any colors.

Again, if 0373GT was the 1955 Geneva Show car, there is no chance it was then raced at Liège Rome Liège. For me, 0371GT is the Liège Rome Liège car... See post #183

There is also a note on the build sheet chassis page stating that engine, gearbox and rear axle have been replaced by the factory.

No it isn't. Most if not all modern colors are remote interpretations of original paints but calling this one grigio latte is simply wrong.
