    If you have an air fryer with enough space, it's a great way to add more doneness to a steak. I now do steaks the way I like them, medium rare. Then, I pop the wife's into an air fryer until hers is medium. Usually a couple of minutes. Fast and the air fryer puts a little more crust lb the steak.

    Tri tip a few days ago. Used some hickory chips that I had lying around for a bit of smoke flavor. Sear 8 min per side. Turn off the gasser. Then shoot for 135 F internal temp.

    Been eating too much red meat, so we tried a catfish place we ran across during one of our drives. Drive past on a Sunday drive and the place was packed! Figured it had to be good. And it was.

    Sides are fried okra and pinto beans. Good as is but better with Tabasco. Same deal for the catfish.

    New Indian market opened in the next town down from us. Closer to D. Stopped by and got a few items. This is pigeon peas. Carrot, onion, tomatoes, ginger, garlic, garam masala, curry leaves, black mustard seeds, garlic powder, S&P.

    Finally got something of note out of our garden. It's been mild, by our standards, but not much has come due yet. Above is a cucuzza. About 2.5' long.

    Quick stop at the butcher for dinner supplies yesterday... went with a few Prime boneless chops. I've never heard of Prime chops. Same with the lady behind the counter, when they put them out it was her first time seeing them also. They were tasty, not sure I could tell the difference from a regular chop. Guess I cooked them well, they were very juicy and tasty - maybe part of the Prime grade? $4.99/lb vs $6.99/lb for Prime.

    Veal chops last night. Fantastic taste. Juicy. Served with a caprese salad using orange tomatoes we found at a farm stand while taking the Cayenne for a drive this past Sunday.

    Threw some salmon with pesto, Italian sausage, and corn on the grill the other night. Made a compound butter for the corn with garlic, peppers and other stuff. Tasty. That butter can make so-so corn taste great. Also threw a jalapeño on, it was not even spicy. Tasty dinner though.

    It's bogus. Lots of stuff on Google, folks seem to be marketing it, but it's not the same grading system used for beef. I'll ask them next time in why it's labeled prime. It can't be USDA Prime Pork, there's no such thing. Gotta love marketing. They made a couple bucks off me.

    From the USDA web site:

    Although inspection is mandatory, its grading for quality is voluntary, and a plant pays to have its pork graded. USDA grades for pork reflect only two levels: Acceptable grade and Utility grade. Pork sold as Acceptable quality pork is the only fresh pork sold in supermarkets. It should have a high proportion of lean meat to fat and bone. Pork graded as Utility is mainly used in processed products and is not available in supermarkets for consumers to purchase.

    We had a retro night dinner and Janet made veal cordon bleu. About half way through the meal, I said: "This is delicious." She said: "Fried food tastes good." Somewhere in the Bible, there has to be a verse to that effect.

    I made chili verde once. It was NEVER to this level of accomplishment! That just looks fabulous. The colors just pop off the plate.

    Driving through Independence, Kansas, we spotted a farmer's market. It was late, so we snagged a few leftover tomatoes and some nice jalapeños. Dinner tonight.

    In honor and memory of our recently departed F-chat Brother @powerpig, I broke out the smoker for the first time in over a year and used his rub recipe and tips he gave me many years ago to make a couple of small pork q's...

    Was a nice meal.

    Thanks for the laughs and entertainment and enrichening our community...RIP Kevin...

    (made some smoked collard greens and mac n cheese to accompany the pork)
