    I didn’t mind the gelatin but some in our group didn’t like it from a textural standpoint.

    My new go-to for ramen broth is ox tails. Simmer the tails in your favorite spices for about 4 hours. Cool overnight. Skim off the fat and any detritus, save the meat. Boil up your ramen noodles, add any add-ins, pour the broth over the cooked noodles, to with the meat. If you want to top with chilies or whatever, go for it. Eat...T

    Not the most elegant presentation but tasty. The dal was very good.

    Shrimp was done simply in S&P, olive oil and a little garlic. The rice - ashamed to admit - is minute rice. :eek: The dal hiding under the shrimp was red lentils, curry leaves, black mustard seeds, ginger garlic paste, shallot. Sweat the veggies and spices, add the red lentils, mix, add water, simmer until the lentils are tender.

    Finish off with a generous dollop of sambal oelek, mixy mix. Mangia!
