My world famous salmon cakes. Photo if I remember. Janet dishing out her mac 'n' cheese. She will drink a NZ SB, I'm digging through the everyday PN bin.

Winter still holding on a bit.
After the front passed and the storms that go with it, the wind started howling from the north.
So, a good excuse to get more soup in.

Homemade ramen. Baked a few chickens last night to eat/freeze. Used the jus, bones, etc. to
make a chicken broth. Let it stand overnight. Scoop off congealed fat. Use that as the stock to boil
up some fresh ramen noodles - that I bought from Mitsuwa market in Plano. A little miso for
salt, scoop of sambal for heat. Corn to get some veggie content.

We are making a shrimp with farfalle tonight. Kind of a scampi but has Roma tomato and fresh basil added at the end. Sometimes I drink a light Italian red with this dish and other times a French Sauvignon such as Sancerre or Fume Blanc. I saute the shrimp with shell on in olive oil, butter, lots of minced garlic, some red pepper flakes and white wine.

I think we have a winner for "Uncle of the Year" award! Bravo. I once cooked a 2.5" thick one and that was an ordeal.

Got a recipe for the Cacio e Pepe? Always looking to improve ours. Usually put some version of grilled chicken on ours.
