What’s the best way to drain the coolant on my Mondial T coupe?
And do I even have to to drain the coolant to replace the coolant temp sensors under the intake? Or will only a little bit come out when I remove them?

No. Just unscrew it, put your finger over it, and then screw the new one in. Only a little bit of fluid will be lost even if you don't put your finger over it.

+1 -- especially if you leave the radiator cap on (if the rest of the system is sealed, no air can enter, so hard for fluid to come out).
